I started making my own corn tortillas, and at first used a glass pie pan (put dough inbetween two pieces of zip lock plastic, and then squash with the pie plate.) I would have to press hard, and rotate the round pie dish to get the dough to squish out to the right size/thickness. It worked well, but I was afraid I would break the glass dish and cut myself I had to use so much pressure. It was sort of a rocking swirling motion to get it to press out right. It worked, but I had to lean on the plate too much. I had used a skillet bottom, but you couldn't see how big/thin the tortilla was, so if you don't buy this, try a pyrex pie pan on two plastic sheets of ziplock material.

My husband purchased this press for me, and it is so easy to use. I use two pieces of ziplock plastic, cut to fit the press, and my flour (Masa Harina) has a recipe on the back for 4, 8 and 12 torillas. These make balls about the size of a ping pong ball or golf ball. They squeeze out perfectly every time, and I use no pressure at all.

I have read that there are two types of presses: cast iron and aluminum. The aluminum is lighter, but requires more force. The cast iron is heavy, and comes with a "shiny paint job" that comes off with time, according to internet reveiws, but my dough does not touch the press with the plastic sheets, so this is simply cosmetic in my opinion. I did notice some grease on it, but I assumed it was to keep the product from rusting, being that it is iron....you put oil on your cast iron pans for this purpose. It was minimal oil.

To protect my granite counters, I put felt stick-on feet onto the bottom since it is heavy and iron. May not be needed, but it makes me feel better. I could not be more impressed with it, and I can whip out fresh tortillas in about 2 minutes. I had at first told my husband not to get me one, I'd continue with the pie plate, but now I am thrilled to have it. It is effortless. I hate to see that some people had theirs break, or not make thin tortillas, but I imagine it is just a problem with their particular unit. If my tortillas were any thinner, you couldn't get them off of the plastic sheet. If they were thicker, they wouldn't be "right." Hope that makes sense! I like the press, and hope that it lasts. I received it in November, and have used it almost daily, and it is now in January...I haven't seen any issues with the product in that amount of time.

6 MONTH UPDATE

Product is still working great after 6 months. I am going to try wax paper as was suggested by a fellow Amazon shopper, in lieu of the zip lock. I have slowed down making tortillas, so it is not getting "as much use" as it was, but this is merely for waist-line purposes! I'd make them all day, everyday if I could, without getting as big as an ox. It has held up well, and makes excellent tortillas with ease.

This is an excellent tortilla press. We just recieved one and yes, it is a bit greasy out of the box, but this is not a hinderance. It made very flat, thin, and (most importantly) consistently good tortillas.

In order to avoid contact with the grease (which there from the manufacturing process to prevent the cast iron from rusting not necessarily a bad thing), we took a 1 gallon Ziploc bag (food grade plastic) and cut it at the seams to create two pieces of plastic. We then trimmed the plastic sheets to be slightly larger than the press. This works wonderfully, we only need to peel the pressed tortilla from the plastic sheet and lay it in to the griddle.

We would recommend this press to anyone interested in making their own tortillas, sopes, or other dishes requiring use of a press.

My wife and I are very impressed with this tortilla press. My wife initially got a plastic press from a local store, and it was horrible. It wouldn't flatten out the tortillas at all because it would bend under pressure.

Then we tried the 6.5 inch aluminum press that is also sold here on amazon. It was much better than the plastic one, but we were still disappointed at the size of the tortillas.

This lead us to the 8 inch cast iron press. It's true that it's a little greasy out of the box, but after a quick washing with soap and water, it is good to go. After putting plastic wrap on both pressing surfaces we gave it a try. It presses our tortilla dough as thin as we want it, even too thin if we decide to push it that hard. The size of the tortillas is much better as well. I would recommend this press to anyone that is looking for a quality tortilla press.

Honest reviews on IMUSA VICTORIA-85008 Cast Iron Tortilla Press Pre-Cured 8-Inch

The one I received had little grease on it, not that it would have bothered me much anyway.

It also presses the tortillas paper thin. In fact, I had to be careful not to get them too thin at first.

Recommend lining each side with plastic when pressing. Then transfer pressed tortilla to a piece of wax paper then onto the grill. That's just the easiest way we found to tranfer them.

Served warm with some queso fresca yum!

this product is great, i was reading all the reviews before purchasing and wondered about some reviews, because YES it comes with instructions, they are ON THE BOX , yes there is no extra paper, but why , the instruction is on the box in english and spanish! It recommends also to put a plastic bag/ paper between the press, so the dough will not stick. People who don't read the instructions will have a problem working with the tortilla maker. To get the tortilla off the plastic, you first lift it from one side off, put the plastic back on and flip it over , now you take the plasic of this side off, keep it off, turn it over and take the other already loosened up plastic off, now you can bake it in the pan. This whole procedure is important, so you don't ripp the tortilla since it is thin! frying no oil and about 50 sconds each side, heat up the pan first before you start, it frys better. if you take a piece of dough the size of a golf ball or little smaller, you get about a 5-6 inc tortilla, put the ball a little off centerlike somebody else already recommended more toward the back and the tortilla comes out more evenyou may have to try out a bit remember just when you started playing with play dough? trying out different things? :) One thing is trueit is time consuming, but to do it together as a family is the most fun! My whole family loves it! Hope this review is helpful!

Bought this through another store because I couldnt wait for Amazon to get them. I will be buying other sizes from Amazon as soon as available though. This pan carries on Lodges tradition of quality American made cookware. The pan is made of nice thick steel(12ga I was told). Heavy but not as heavy as the 12" cast iron. It is 12" from side to side, aprox. 9.25" cooking area and has a 9" handle. The sides on this pan are not as steep as their cast iron. The factory seasoning finish is excellent with a few very tiny specks of oil build up. The pan heated up quickly and held heat for longer than I expected, but naturally, less than cast iron. I fried eggs and browned ham in it as soon as I received it today. Turned out very well with minor sticking, but cleans up very well. Sure to get better with time! Glad I added this pan to my Lodge collection!

After using this pan for awhile I can honestly say it is a very good one. Being made in the USA is a plus too. Lodge knows a thing or two about metal cookware.

The handle is long so it can be used over an open flame fire. The build quality is sturdy and it will last a lifetime.

There is a learning curve that took me about a month to figure out. Cooking temperature and proper seasoning are a must.

The factory seasoning is OK but it states eggs will stick. I re-seasoned it and it is now virtually non stick.

The more you use it the better it gets. Searing meat at high temps is great.

I enjoy stir frys and just about anything you want to cook you can do it in this pan.

It seemed expensive at the time but this pan is built to last and I won't ever need another in my kitchen. About half the weight of cast iron and that makes a big difference in handling. Heats up quick and cooks evenly. By the time I wrote this review my chicken breasts are done. Fits three boneless in the pan.

I recommend it!

Best Deals for Lodge Pre-Seasoned Carbon Steel Skillet

I had the pleasure of purchasing one of these pans at the Lodge Factory Outlet in South Pittsburg, TN a few weeks ago (more cast iron than you can shake a stick at!).

I purchased the 12-inch Seasoned Steel skillet for two reasons:

1. I've been using DeBuyer's 10-inch Mineral-B and find carbon steel pans to be my go-to pans, preferred over my All Clad, T-Fal non-stick, and even cast iron skillets.

2. My mother-in-law recently discarded her 12-inch cast iron pan because it was just getting to be too heavy, so I was interested in finding a substitute with few compromises.

First of all, I like this pan. Like other carbon steel pans, it's dead simple. It seasons easily and is very durable.

But this pan brings some negatives as well.

Pros:

1. Light weight. 12-gauge steel is significantly lighter than the 3 mm of the De Buyers in the same size.

2. Simple and durable. There's nothing to break, and no non-stick coating to scratch or flake off.

3. Allows for high-heat searing, and goes from stove top to oven very naturally.

4. The Lodge 12-inch glass lid fits perfectly.

5. It's made in the USA.

Cons:

1. The lighter weight relative to DeBuyer or even other Lodge cast iron means less thermal mass. Thermal mass is what makes those heavy pans perform so well. This pan is thin enough that the heat dissipates fairly quickly. If, for example, I prepare my skillet potatoes in a cast iron pan, the pan comes out of the oven at 375 degrees and stays too hot to touch for a good 15 minutes. With this pan, the cooling is much quicker, being "touchable" after only about 7 minutes (give or take). In short, it doesn't have the thermal mass to perform like cast iron or DeBuyer.

2. The lighter weight seems to allow for warping. I inadvertantly heated my skillet to over 600 degrees for 10 minutes or so. I immediately lowered the heat and let it cool naturally, but the pan no longer sat flat on a glass cooktop. I understand that it wasn't intended to tolerate that kind of abuse, but I would like for it to be more stable. (Lodge was great about exchanging it as defective even knowing that I'd abused the pan.)

3. The seasoning and pan finish are rough--more like cast iron than like the other carbon steel pans I've used. It seemed to function reasonably well on my first pan (the one I overheated), but it remained a rough surface. On my second one, I sanded it smooth on the inside surface and reseasoned it using the Canter method (google it). Much better, and improving with every use. I believe the factory seasoning would be adequate, and would also improve with use, but I was impatient.

Conclusions:

It is what it is. I wanted a lighter-weight pan, and this qualifies, but requires compromise on the other traits I was seeking. I think the quality is great, the price is right, and it provides a good entree into the world of carbon steel cooking. Just be aware of the limitations and trade-offs, and that thicker carbon steel is just that much better.

Honest reviews on Lodge Pre-Seasoned Carbon Steel Skillet

Twelve inches is the diameter from rim to rim. When I received this pan, I had to look twice to make sure I didn't order the wrong size; Indeed it was the 12 inch, but the actual cooking surface is only 9 inches.

This pan is still useful, but if you're used to cooking in the Lodge 12 inch cast iron skillet, then go for the 15 inch carbon steel pan.

Find helpful customer reviews and review ratings for Lodge Pre-Seasoned Carbon Steel Skillet

I wanted to like this pan as it's much lighter than the De Buyer carbon steel pans and it comes seasoned. However, the bottom isn't flat enough for my glass cooktop. I made grilled cheese in it the other night and the pan rocked on the center. It had a hot spot in the middle, that was reflected in the bread burning on one side and barely toasting on the other. Not exactly what I would call even heat distribution. This is either getting returned to Amazon or given to someone with a gas stove.

Be sure to season and put them in the oven as recommended by manufacturer. These pans are lightweight, do what they claim to do easily maintained and help you to cook healthier using less oil etc. The only drawback is they are not induction cooking compatible. I keep these pans at the house for cooking with gas and had to purchase Ja Henckles Zwillings "Spirit" pans for use with the induction cooktop I recently purchased.

I used Peanut oil in the first one.....stuck like Stainless steel, bought another one used Pam this time, same thing, bought another one used "Best Choice Vegie oil with the same outcome, I am begining to think this is just another scam, I also found these pans much cheaper at the Local "Fred's" store. I haven't givin up yet, I will Boil them in Dish soap and try again, they say that will bring them back to Factory finish. I'll let you know. Next day, I boiled 3 pans in soapy dish water for 30 min, reseasoned them with Veg oil as drected, still stick....I just don't know what to say now, I have Cast Iron pans that do much better at not sticking, save time and money invest in Cast Iron it will be here long after we are gone.

I love my new orGREENic pan. It does everything they claim...doesn't stick, the handle stays cool and best of all it's non-toxic. I didn't season it either.

Review of Good Cook Epicure Square Turner

Good Cook Epicure Square Turner
Customer Ratings: 4 stars

I eat a ton of eggs. I like to fry them, so it's important for me that the spatula itself be sturdy, but that the tip is flexible so that it can slide underneath the egg without breaking it. I guess I didn't read the other reviews carefully enough, but looking at the picture, I thought that was the case. In fact, the entire turning part is made of a hard plastic. It's still possible to flip eggs with it, but they don't turn out nearly as nice as with my old turner, which recently broke. In addition, the first couple times I used it, the egg was sticking to it, making it difficult to make scrambled eggs as well.

The construction of the turner itself seems sturdy enough though; if you're looking for just a hard piece of tapered plastic on the end of your turner, you should be fine with this one. If you cook eggs, I'd go with something else.

I love this spatula! It's sturdy, not flexible and flimsy. What sets it above all the rest is its edge. Comes to a smooth, super-narrow point all along the turning edge, which means it'll scrape anything off a pan with ease. I'm ordering more like this and getting rid of all my other spatulas.

Best Deals for Good Cook Epicure Square Turner

I've used this for about 3 months and it has made cooking pancakes and french toast a breeze! I also have had no problems with putting it in the dishwasher. The metal is not rusting and the handle is not loosening. Overall, it's a great turner!

Honest reviews on Good Cook Epicure Square Turner

This is a great turner if you need a firm, non-flexing blade with a sharp edge. I find it excellent for tasks such as browning chicken or other meats that may stick a bit to the pan. The sharp edge of the turner makes it easy to get under the meat and flip it over, and scrape all the stuck pieces off the pan. It's made of nylon, so it won't damage a nonstick coating.

It's not the best choice for flipping delicate items such as eggs since the blade has virtually no flex to it. But for other uses, I find it works very well. It's about as close as you can get to the functionality of a sturdy metal turner but still protect the nonstick coating.

The build quality is better than I expected for the price (under 4 bucks). The turner end measures 3.5 inches wide and 3.75 inches long. The handle is plastic and comfortable to use, and has a nice indent for your thumb so you can get a good grip. The handle also has an eye hook at the end if you want to hang it. The handle is 9 inches long from where it attaches to the blade. It's 12.5 inches end-to-end.

Very nice and highly recommend.

The product description claims that it is heat resistant yet the edge of the spatula melted a bit after normal use and started to flake. I had to scrape off the loose plastic. Now I'm very careful not to expose it to heat for very long.

This is the "4 pc. 14 in. Xylan Nonstick Wok Set" From the description on the Amazon product page I was expecting the "4 pc. 14" Carbon Steel Wok Set"

The pan looks nice, but has the handle problem others described. There is a metal component that goes through the wooden handle and screws into the part bolted onto the wok. That bolt is too long so if you hold the wooden handle the pan will spin upside down. Not a good thing to happen when cooking hot food!

I'll likely be returning this since a natural carbon steel wok is more authentic and cooks hotter and I don't feel like cutting down the bolt to get the handle to actually function properly.

Using a wooden spoonscratched on the 2nd use. I was browning cashews, so maybe that did it. I paid just 12 at Amazon warehouse, but still not worth it.

Update: Sis used the Seasoning recommended prior to use (I had reminded her of this from the Ebook Sample I downloaded). She had no cleaning nor sticking problems, just the food was too spicy for hubby and teenager.

^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^

I purchased this as part of a list my Sister gave me for Christmas. I went more by reviews than the price of the item. I also asked if she wanted one for the stove, or an electric plug in device.

Turns out this was THE PERFECT Wok. After purchasing some books (in particular Stir-Frying to the Sky's Edge previewed it first), a carbon steel wok is the best to cook with. I also wanted to introduce her to some e reading.

She enjoyed that there was more than just the Wok in her package. Since her Hubby was a little stingy (Scroogy?), she claimed this was her most favorite gift.

So far, this earns a 5 star review. She says I'm invited over sometime next week for Stir Fry after that if I need to edit the stars .... ;-)

PS for her hardcover tastes, and those beginning lessons I also included Wok Cooking Made Easy: Delicious Meals in Minutes (Learn to Cook Series)

Good, its square, to maximize the surface area per the amount of width & depth; I wonder why other pans are round? We finally got tired of scaping eggs off the previous grey The anodized aluminum "C" brand. SD does have quite a bit of thermal mass to it, so it takes a while to reach temperature. Of course there are positives to that when it comes to searing. The 8x8 size is correct and efficient for 2-person meals. The coating formula seems to have changed since our 13" fry pan about 6 years back. Now its got a blue-green tint, whereas dark grey before. We will continue to invest in SD.

The square shape of this saute pan takes some getting used to; I wonder why they made it square instead of round? And the weight of this fairly small saute pan is much greater than the weight of my other Swiss Diamond pans, so it's a little hard to handle. I wish I'd known about Swiss Diamond years ago and not wasted time and money on other brands. Swiss Diamond's the best, food never sticks, it cleans easily, it heats evenly, it's a cook's dream. -Oh, one drawback: I've been interested in the new countertop induction cookers, but I'd have to buy a whole new set of iron pans. Swiss Diamond is aluminum (then what makes it so heavy?); a magnet won't stick to it, so it won't work with the induction cookers.

This is the best nonstrick griddle I have purchased. You only need to heat medium to medium-high to get the best result. I use a little oil to give flavor to the food I am cooking and everything slides right off! I use it to make a lot of chicken. The pleasant surprise is that I can now make eggs over easy on medium heat sets nicely to be able to flip without breaking the egg and without overcooking it. This is the first pan I have ever been able to achieve this. Since it is such a nice size, I cook eggs and ham and other items all at the same time.

Unlike other nonstick pans I have purchased in the past, it has retained its' "nonstick".

I have used this pan extensively, mostly for pancakes. I think I have had it about two years now. Food now sticks to it and it is no longer easy to clean. I never wash nonstick pans in the dishwasher and try to avoid high heat with them, although I am sure there were a few burnt pancake and blackened toasted sandwiches (mea culpa). This pan is thick enough to heat evenly and not warp. Probably the worst mechanical wear my pan has had is storing one pan atop another.

By chance, I had borrowed an OXO Goodgrips travel mug from my brother in law, and really liked it--not to mention it was the only travel mug I've ever used which didn't leak or drip whatsoever. I was going to buy one for myself but really wanted something just a little bigger than 12.5 ounces. So, I bought the LiquiSeal Thermal Beverage Container which I believe is approx 24 ounces. It's perfect! The only thing which I noted when I first bought it was the need to "exercise" the button a number of times, as it seemed like it wasn't opening or sealing totally at first, but it's working fine now. A word of caution: As it states in both the packaging and on the bottom label, DO NOT put this thing in the dishwasher. The heat will shrink and harden all the seal and cause it to leak. Great product!!

I got this mug for fathers day 2011 and within a few weeks of use the lid was hideous and had water stuck in it that could not be removed. It would appear that i had gotten the mug with the old single-piece lid even though recent reviews make it seem like the lid was redesigned earlier this year to be a two-piece system that allows for easier cleaning. So i called the company to ask about the situation since it was such a recent purchase and they told me to immediately throw away the lid and that they would send a replacement lid to me. The replacement lid arrived within a few weeks and sure enough it was the new redesigned two-piece system which is much easier to clean. I love this mug but I cannot give it 5 stars because it is not dishawasher safe....

To anyone having issues with your lid, please call OXO because they apparently do care about what you think. (800)545-4411

Best Deals for OXO Good Grips LiquiSeal Thermal Beverage Container

Had a difficult time finding a travel "mug" with this much capacity (about 24 oz) but this fits the bill perfectly. It doesn't keep the beverage steaming hot as long as a thermos when you are actively drinking from it but it keeps it warm enough for a good couple of hours.

Only issue is you have to be fastidious about cleaning this after beverages such as coffee because the sipping mechanism is complicated and has lots of nooks and crannies where having dried up coffee would not be a good thing.

Honest reviews on OXO Good Grips LiquiSeal Thermal Beverage Container

In general, the vessel is well built.

It just needs a simpler mechanism for allowing fluid flow through the cap so all surfaces are cleanable in the event that it sat for a couple of days and got moldy as did mine. So I don't use the flow-through button cap anymore. But while attempting to thoroughly clean it, I soaked it in dishwater and now, that dishwater has infiltrated the hollows in the cap and does not drain. It does, however, lend a smell of dishwater to my coffee.

I got this to take on my bike (just barely fits in a Topeak Modula Ex) since I was getting tired of having cold coffee halfway through class. It's a great size and the cap and button system work great. Unfortunately that same button system ruins the thermal insulation and greatly decreases the amount of time coffee stays hot. You can feel the rubber section in the middle start to heat up almost as soon as you fill it. It stays hot long enough for my purposes, but I'd go somewhere else if you're looking to have a hot cup of coffee 8 hours after filling it.

I have another pan of this size that is Teflon coated. We use it all the time. It was used improperly a few times for searing meat which started to damage the Teflon. I purchased this to have a sauté pan with a stainless surface. The aluminum on the pan is thick enough to prevent hot spots, but I do wish it was a bit thicker. Heavy enough for things like stew, but heats quickly and holds a lot! Even my mincemeat recipe fits in this bad boy! I've had no trouble with the enamel scratching or chipping. So far, so good!

At this point, there is nothing Le Creuset makes that I do not want and nothing in my kitchen that I won't replace with Le Creuset. This falls squarely in line with the rest. Going from a stainless steel stock pot to enameled for my jambalaya, green chili, beans, or whatever I need to simmer slow and long has been great.

Staub Round Cocotte Review

Staub Round 2 Quart Cocotte, Grenadine

This is a terrific item, that is beautifully finished. Is it better than le Creuset? That's a matter of opinion. Both brands are top quality, so I would readily recommend either one. The 2-quart size is great for preparing main courses for 2-3 people, but not as good for larger dishes. Last, but not least, Amazon had a very low price on it with fast, free delivery.

This is my first piece of Staub and I was looking forward to receiving it. I was aware of the size but love it for small jobs it really keeps you items moist. Very interesting how it compares to my Le Creuset. Different interior color and texture which actually adds to the sealing in of the foods juices. Clean up was simple as well. Would by another piece to add to by Enameled Cast Iron collection. Great Price too!

I could not resist the good deal I got on this "French Oven" in basil. I love this item! It is a darling little pot sitting on my stovetop. This 2 qt size is quite small about 7" diameter x 3.5" high. But that also makes it easier to handle than the larger Dutch ovens, since it is still a solid, heavy duty enamel cast iron pan.

This pan makes PERFECT! rice nice and fluffy, absolutely no sticking or browning/burning on bottom of pan. I think it is due to the even heating of the cast iron thick walled pan and also due to the self-basting spikes on the lid, so that the rice steams perfectly in the pan. I have made white jasmine rice and regular brown rice and both turned out PERFECTLY. Much nicer than a rice cooker or pressure cooker. Recipe: I followed the rice:water ratio on the package (1 c dry rice) and added 1/4 tsp salt and 1 tsp butter. Add everything to pan, bring to a boil, cover, turn heat to low then simmer for time directed on package. Remove from heat (do not remove cover) and let sit until ready to serve. It fits 1 c dry rice (cooked) just right any larger quantity and I assume it will overflow.

I have not yet used the pan for cooking anything else. It is a little small for homemade soups or main dishes but would be good for reheating (if that is your thing I am a microwaver, myself). I think it will make great oatmeal or steel-cut oats by a similar method to the rice. I also love the color of this pan a deep pretty green.

I love-love-love my little baby cocotte! The eggplant color is so beautiful, I leave it sitting on my stove just to look at it. The size was a little smaller than I realized it would be, but turns out to be perfect to cook rice or anything else that needs constant, even heat. Next on my list is a big daddy Staub so I can cook roasts or soups.

We've been using this pan for more than a month now and so far it's far and away the best non-stick pan we've ever owned. No more teflon poisoning for us. This ceramic coated product is the real deal. Going to buy the larger version ASAP.

This is the best pan I've ever owned and you can't beat the price for both the pan and lid. I love the heart designs on the bottom and the nonstick surface is killer. It cooks eggs so well and you basically just have to rinse it to get any food off for washing purposes. I'd buy an entire kitchen's worth of this product if they made more than just two sizes of pans.

Have had this for several months and use it every morning. Excellent pan, makes great eggs. Use a plastic turner to preserve the coating as it will scratch with a metal one.

Honest reviews on Bella Flame 9.5" Green Ceramic Coated Nonstick Fry Pan w/ Glass Lid

I've only had this for a few weeks, so I can't comment on how well it will hold in the long run, but at least until now it is great. It seems sturdy and well made, the non-stick works perfectly, heats well and evenly. It is aluminium, so it is not to heave, but neither it is so light as to seem flimsy. Nothing bad to say about this pan.
