This is heavy, solid, and BIG. Lightly ridged sides keep food out of the oil. It's sturdy, well-made, generously sized -this is a real treat to cook with.

This is a rounded bottom wok. It's best used for cooking on a gas range. If you cook on electric, you'll want the flat-bottomed wok. It also needs to be "seasoned" they way you would season cast iron. If you do that, you will end up with a cook surface that cleans up beautifully. However, you do have to be aware of this when you scrub it clean don't use anything too abrasive or you'll have to re-season it.

I have been nothing but pleased with the performance of this pan. It heats up well, cooks beautifully, and the seasoning has made it lightly non-stick (just like with cast iron) and so cleaning up isn't a major chore. I heartily recommend this wok for anyone cooking over gas. I love mine, and I think you will love it, too.

I want to start out by saying that I've owned this wok for about 6 months now and it is still serving me well. There are also no issues with the metal or the cooking surface in general when properly seasoned.

My biggest complaint about this wok, is not about the wok, but those horrible seasoning instructions that is comes with! DO NOT FOLLOW THE SEASONING INSTRUCTIONS! THE PROCESS IT DESCRIBES IS NOT THE TRADITIONAL WAY OF SEASONING A WOK! Needles to say that process did not work for me. There are many instructional videos on how to season a carbon steel wok on YouTube. Do your research! There are many ways of seasoning, but none of them look like the instructions on the sheet!

The way I seasoned my wok:

1. I scrubbed the inside and out side of the pan with soap and an abrasive sponge to remove any leftover oils from manufacturing. ( this should be the only time you ever use soap in a wok without a non-stick coating! )

2. I boiled a good amount of water in the pan, like the instructions said, to help lift the oils left on the pan from manufacture and any leftover soap. (you don't really have to do this, but I did to be safe.)

3. Put the wok over medium to high heat until the center turns a dark metallic blue color. Once the center of the pan has turned completely blue ( I believe it take like 5 to 10 mins ) tilt the pan on its Side and allow its side to turn a dark blue color as well. Keep rotating the pan until the whole thing is dark metallic blue.

4. After the pan has changed color it should be ready to use. However, I didn't trust this. For a last measure of seasoning, you should stir fry a bundle of chives and sliced ginger until completely burnt. Using your spatula rub the chives and ginger on the sides as your frying. This helps to establish a patina on your wok, which will grow stronger the more it is used.

5. Enjoy.

I purchased this round bottom wok years ago and fell into disatisfaction after using it a few times, having problems with sticking food and minor rust problems I put it in storage. More recently after seeing a video on wok seasoning and care I brought my wok back into service. I learned that proper seasoning and maintenance is actually easy when you incorporate it into your cooking experience. While I wish I had a gas cooktop I still prefer the round bottom because the wok ring allows you to set the height and gimble the heat to where you want it. I've been making some of the tastiest meals I've ever cooked in this wok, and rust is a thing of the past. Do all your food prep before heating the wok because you will be cooking fast. The cleanup is simple. Just run some hot water into it and a quick scrub with a stiff bristle brush and dry.

If you really want to see the round bottom wok cook the way it was invented for, you can lay it in the bed of a wood or charcoal fire. It makes backyard parties and camping trips really taste good.

Proper seasoning is going to make lots of smoke the first time, so be ready for that. Also be aware that the hot oil vapors can flash fire, so be careful. My wok is now a primary cooking implement and I've purchased the ladle and spatula to make it easier and faster to cook with. I rarely buy chinese takeout anymore because I cook it my way now. The wok is also great for reheating stir fried leftovers. The wok now has a nice blackened color to it and is frequently a conversation starter.

Wok cooking is an art form and needs to be practiced to make perfect, but "perfect" comes in many levels and stages. So begin with proper seasoning and be adventurous and experience foods in a beautifully delicious way.

After doing a bunch of research I've found that carbon-steel, round bottom is the way to go and I was not disappointed. The carbon-steel heats up very quickly and although it may not hold the heat like that of a cast iron, isn't the point to have the nice hot center for cooking anyways? There have been some issues with others about the handle and here is whats going on:

When you receive the wok it comes in three parts: the bowl, the handle, and a threaded rod for attaching the handle to the bowl. If you look on the bowl where the handle attaches you will see two little "wings", if you will, that look like a stop block to keep the handle from going all the way down to the bowl when screwing down the threaded rod. That is only partially right. If you stop there the handle will indeed rotate freely. I however continued on and as I kept tightening it down the wings embeded themselves into the wood of the handle thus preventing the handle from turning. The wood is fairly soft so no more than hand turning should be needed. However I discovered this when trying to season it and the heat very potentially softened it some.

In short if you attach the handle correctly you should have yourself a really great cookware which will serve for many years.

Lastly others haven't mentioned sesame oil for seasoning but I used it to add a little bit more to my seasoning and it worked great. Just don't let it pool and cook on that way. Otherwise while cooking it will come off leaving an unseasoned spot on your wok.

Juat a "heads-up" for those of you looking for a nice Round Bottom Wok. This wok is listed as "round bottom", so I ordered one for use on my gas top stove. I specifically wanted a round bottom wok as I not only believe they cook more evenly, but I have a wok ring to use with it. Amazon suggested I buy a wok ring to go with this wok. When it came, it was FLAT BOTTOM! I was so disappointed, but ordered another (which shipped very quickly, thank you Amazon) and the second one was ALSO FLAT BOTTOM! I returned it, too. I am taking a break from the order-and-return cycle, but hope to shop again here with Amazon. I just won't order the Joyce Chen Round Bottom Wok...although the quality looks superb.

I had the older version of this skillet. It was half the price but only came with one pan. I loved it. The nonstick coating was virtually indestructible. I used metal utensils in it all the time and never got so much as a scratch. Well, I became so confident in the strength of the coating that I used a steak knife to cut a steak in half while it was in the pan to see if it was done. It wasn't knife proof. I guess I could have just ordered a replacement pan from Zojirushi, but I decided to buy this EP-RAC50 instead. It's better than the old one was. It's a little bigger, a little nicer looking. But I really like having the two pans. I can brown meat for spaghetti in the grill pan, and then boil noodles in the other. I don't even use the stove top anymore. You don't have to worry about pans being centered on the burner or sitting flat. Plus you have much more precise control over the temperature. It heats very evenly and the thermostat seems to be very accurate. I also like the fact that the nonstick coating is NOT Teflon, which is carcinogenic. And it's much more durable than Teflon. I don't need to use oil or butter because nothing sticks. Not even eggs. It wipes clean with a dry paper towel! Another nice thing is that you can remove the pan from the base so there's less chance of burning your food when it's done cooking unlike with some cheaper skillets where the pan and heating element are one unit. If this skillet breaks, I'll buy another one. It's worth every penny.

Gets hot quick.

Keeps the heat it is set for.

Looks good.

Very easy to clean.

Steaming food works great.

Cooks to perfection (so far).

Glass top makes it "fun" to use and see the cooking process.

A 2lb. meatloaf made in this pan was the best I've eaten and I didn't have to use the oven.

Next up is: Roast chicken and baking.

Wish:

1. That the pans were perfectly flat. The pans slope slightly to the outer edges and more oil is needed to compensate for the depth of the oil at the center. So trying to cook with less oil is difficult because the oil gathers toward the edges.

2. Hope they can make a Wok like pan insert that can be purchased as an option.

3. That the cover be tight fitting with the vent in the cover.

Other than that the product is the best electric skillet I've used.

I would recommend it to anyone.

How does it hold up after 6 months of use Feb. 2010 thru July 2010:

1. I only use wood and plastic utensils but the Pans scratch very easy and $77 plus to replace just one pan.

2. The manufacturer won't stand behind the pans unless you send it back to them for evaluation.

3. Even though the pans scratch, they clean-up without scrubbing. Very easy....

3. Contacting the factory rude.

4. Pans are not flat is still my biggest issue.

Still, the Zojirushi is the best and most versatile electric fry pan I've used.

I use it at least 4 to 5 times a week and I would but it again.

I wish I had this in my apartment living days! I got this as a present for a hotpot party from my husband.We were expecting 12 people over and I'd been using my cusinart fondue pot (which has worked when it's 4 to 6 of us). I have another electric skillet but it's old, cheap and not reliable. Hubby got this and (1) sticker shock, holy crap! (2) wow it's big! it's really big. I had thought about returning it b/c of the cost. I'm glad I didn't.

We used this as our non-spicy hot pot. Poured some seasoning, broth and water, bam ready in a matter of minutes. It boiled the broth. I was surprised. So this is great for a decent size group of people. It didn't burn my food it kept the broth at a stable temperature. The meats/foods were cold (refrigerated/frozen) but we didn't notice any drastic temperature changes. Even heating for all uses (steaming, boiling, pan frying)

It's also a pretty looking machine, very easy to use, very easy to clean! Non-stick for real and just a wet soapy sponge, and everything comes off. The nonstick coating is still working even after all the abuse of metal utensils, chopsticks, spatulas, whatever.

SAFE! If you happen to knock/trip on the power cord it'll pop off magnetized so you don't have to worry about the whole pot going with it. The handles on the pot stays cool even if the pot is boiling.

UPDATE:

I've steamed a whole fish (4lbs)!! I used the steamer rack with some ginger and scallions, let the water heat up, put the fish in, 10 minutes later, the softest, silkiest tender fish ever. It looks big at first but it's perfect even for 2 people

Steamed tofu with ginger/scallions same as above, also delish.

Soups easy peasy, used the large pot, browned the meat, threw in the veggies, then stock done!

Green Chile browned my meat and caramelized onions, threw in all the other ingredients and seasoning let this sucker simmer for a day...meat is so tender and flavorful, the chile was a hit.

Use the shorter pan to brown potstickers

Temperature settings are great! I haven't used my crockpot since we've gotten this it actually COOKS the food not just keeps it warm.

It can get REALLY HOT, or simply keep the meal warm.

No more 'hot spots' is one of my favorites! The pans heat evenly.

I love having two pans. I have used it for everything from soup to stir fry.

It has earned the title of 'Super Pan' in our house!

I needed a new electric skillet, and didn't want to go another round with the uneven heating and flaking nonstick coating I've come to expect with the "disposable" $30 skillets from the usual sources. So I decided to drop some $$$ and get one that would be a real piece of cookware instead.

The Zojirushi arrived, and I was first surprised at how really large it is. I have normal kitchen cabinets, and I wasn't sure I could even find a place for to put it. But I figured that's a small price to pay for quality, and moved on to the instruction manual.

This electric skillet is a workhorse that will do far more than I expected from just a skillet. And there are instructions for all of it. But then I came to the "Care and maintenance" section.

It turns out that, the main pot must be hand washed--no dishwasher. Call me lazy, but that's a dealbreaker for me. It also requires a rubdown with vegetable oil to prevent rust, and rust is a dealbreaker even without calling me lazy. Finally, storage instructions were very clear that things had to be stacked in a particular order to avoid bending this or warping that.

To sum it up, I returned the skillet. It looks like it's really versatile and appeared to be extremely high quality and worth the $150 purchase price if you're comfortable with the service you must provide in return.

I recommend a visit to the website where you can download the instruction manual before purchasing.

What is the primary difference between this pan and a basic mini-bundt pan? The picture doesn't do the pan justice. Some of the pumpkins are a little narrower and taller and some are a bit squatty. There are leaves and tendrils embossed on the pumpkins -all differences from the standard mini-bundt pan.

You get what you pay for, and the quality of this pans is worth the money, and properly cared for, it will last a lifetime. For perfect unmolding every time -although the pan is non-stick, it needs to be properly prepared -and that is most easily accomplished by using either Wilton's cake release or a cooking spray designed for baking (one that contains flour.)

To ensure a perfect unmolding, let the cake cool upright for ten minutes after removing it from the oven before inverting it. Too soon and the cakes will be fragile and may fall apart, longer than 10 minutes and the cakes begin to adhere to the pan and may stick. And, as with all non-stick surface pans, never use metal utensils or harsh scouring pads on the pan.

Dense batters work best because coarse batters (lots of air and little fat) have lots of bubbles which reduce the amount of detail reflected in the finished cake. There are many recipes for pound cakes and bundt cakes that will work perfectly with this pan, along with the recipe included with the pan from Nordic Ware. Give the pan a good rap on the counter before putting it in the oven to release any trapped air bubbles. The cakes produced are intricate and highly detailed. It looks like much effort was expended. These pumpkin cakes will add a lovely touch to a Thanksgiving buffet or a Halloween themed party.

This is a beautiful, detailed mini bundt pan. Ordinary cake or muffins will become delightful eye candy that will impress your family and friends. The 12 little pumpkin shapes have subtle differences some tall and slender, some short and fat, and some with leaves and tendrils. They are adorable as is or can be decorated with icing for a more elegant presentation. The Nordic Ware Platinum Collection pans are top quality durable enough to become family heirlooms with a non-stick coating that actually works. As with any baking pan, to get best results spray with a non-stick baker's spray containing flour, like Baker's Joy. Do NOT use the regular Pam type sprays for baking or your results will be disappointing! With proper care this pan will be handed down to your grandchildren and perhaps great-grandchildren. I've only recently discovered that I have a "thing" for cute pans. So, I wound up with this one after I saw it in Williams Sonoma one day. Sure am glad I bought it! It was featured on the cover of the Southern Living fall magazine this year too and well, I HAD to have it! I used their receipe too and although I didn't like the cake part, the icing was wonderful! Anyway, this pan is a dream to use. You put it in the dishwasher when you're finished too and that's certainly a plus. The cakes come out whole, don't fall apart in the pan, and even include leaves on the ends so that you can make candied leaf patterns to place on top of the pumpkins. SOOO cute for Thanksgiving and fall in general. My only suggestion is that you need to gently tap the pan before you bake the pumpkins. Otherwise, you can wind up with air holes on the tops of the pumpkins. Great, great, SUPER cute product. Highly recommend!

These stunning canisters came the day we were moving, so it was PERFECT timing. I didn't get to open them right away until I was unpacking the kitchen things. WOW! Was I surprised! These are SO much prettier than the image given here and heavy. I filled the smaller one with a whole box of Red Rose tea and still had room for more. The middle size got a full 5 pounds of sugar with no problem and the largest one can easily fit 7 pounds of flour. A lovely muted tone of cream and glazed these also have rubber seals and get MANY compliments. All the ladies that were at our house warming party were in LOVE with these. I highly recommend these. Just BEAUTIFUL!

These canisters are are indeed lovely to look at-super classy, a little rustic and old timey. The shape is graceful and the raised pattern is well proportioned to fit each size. But they are also very functional. The lid has a soft plastic gasket to help seal it. If the gasket ever breaks, it will be easy to replace with a wide rubber band. The handle on the lid is large enough to slide fingers under. This ensures that it won't slip out of your hand accidentally. Large, medium and small will hold a 5# bag of flour, 5# bag of sugar and a box of corn meal easily. Or use then like I do: cookies, nuts and candy.

I wouldn't have known what to do with this a year ago. A small cast iron pan with handles for pot-holders. What's it for?

Then I had what may be the best dinner of my life, at Mario Batali's new Vegas steakhouse, Carnevino. It was early fall; they had an item on the menu, "Market Peppers." Vine-fresh, long skinny red sweet peppers were seeded, cored, brushed lightly with olive oil, sprinkled with sea salt, and oven-roasted and then brought to table in this little pan, or one very much like it. The pan was so hot that it kept sizzling them right at the table; you served yourself and the sweetness, the good roasted flavor where the hot iron had seared the pepper skin, was just unbelievable.

You can make this, and other similar vegetable, potato and mushroom dishes, at home in this wonderful little pre-seasoned pan. Because it's cast iron, which retains and delivers heat wonderfully, you need very little oil; foods sear nicely without scorching, and cook through without needing to sit in a puddle of oil to do it.

I pretty much want this on the table every day, filled with delicious roast things. You can also use it for breakfast scrambles, one-person casseroles or pot pie, or pretty much anything else you like it's cast iron, it's indestructible. Just don't put it in the dishwasher no soap please, just clean by rinsing under hot water with a stiff brush, then coat with oil lightly and put it away.

If your lifestyle is anything like mine you're probably the last one to sit down at the dinner table. Having cooked the dinner and brought it to the table, you sit down and your food is cold. I hate that! I purchased six of these mini servers, and I couldn't be more satisfied with them. Because they are cast iron you can put them in the oven and bring them to the table, (don't forget to use pot holders), and put a pot holder underneath to protect your table. The food stays nice and warm till finished. I make up a casserole recipe and spoon a serving into the mini server, place a little cheese on top, pop it in the oven. The cheese melts down through the food, so yummy, and warm food! Because it's cast iron, you have to care for it. Scrub it out with a nylon brush and hot water, never use soap, dry it immediately, wipe a thin coating of olive oil on it, or any other oil, and you're good to go for next time. I've never had anything stick to the pans. There are probably numerous uses for these, but this is how I use it. I highly recommend this pan.

I have been using Lodge's line of cast iron mini-servers for a few years now. Once I discovered the usefulness of these little pans and skillets I bought one of each. I tried the 3.5-Inch skillet, the 5 Inch skillet, the 6.5 Inch skillet, the 9 oz. oval server and this 10 oz. rectangular mini server. I found this one to have the least amount of "eye appeal" of them all. However, it is very useful for a wide variety of dishes.

I have used this server very successfully for a wide variety of casserole type meals. What is nice is that the cast iron keeps the food nice and hot for a long period of time. This particular server is extremely well suited for some of my favorite dishes. The first thing that I used this for was an updated version of mac 'n cheese. I ate it slowly, over a half hour or so, and the cheese stayed melted and the noodles were soft. However, in the end I decided that the oval server was better for my needs and this is only server in the line that I did not reorder.

This dutch oven was given to me as a gift. I am your typical engineer who loves the process of cooking.

The pro's of this cast iron dutch oven.

1. It is nice and heavy which means even heating and heat retention. I am very happy with how even it holds heat when I am browning meat. It does not loose a lot of heat when you put meat in it to brown.

2. Side Handles are large enough even for big hands.

3. Pre-seasoned which is nice but is no big deal. Can easily be done and I would not use that as a criteria to not buy a superior product.

4. Price was reasonable. $49 at bed bath beyond and it was $40 with coupon.

5. Lids fits well.

6. 6 quarts is a good size. I can cook a whole chicken in this thing along with all the fixens.

Now the cons.

1. Lid handle is attached with one small screw. It feels like some porcelain and the screw can loosen and the lid can spin on the handle. Makes me worry that the lid will fall off or the screw will break. If you hands are wet the handle can be slippery.

2. Made in China. This is a concern of mine because the Chinese have had so many problems with making products with hazardous materials. I am not saying it is made out of something hazardous but it is a concern when your cooking for you family. I am disappointed that Emeril seems to go overseas for all of his production.

3. Update. After two weeks the porcelain lid handle is chipping. I have personally hand washed and babied this dutch oven and am very disappointed in this. I may return it and get a LodgeLogic dutch oven. I have a gift receipt.

I have lowered my rating from 3 stars to two because of the chipped lid handle.

All in all I am happy with the product and the only real negative is the handle. If I would have bought a dutch oven myself I would have bought a lodgelogic product because the handle is cast iron and they are made in America. Cost is about the same or a little more.

I got this for Christmas so I haven't used it a ton. I will say you need to take time to season it. It says it's season, but from what I hear and have read ALL cast iron really needs to be seasoned when you get it. It's a very easy process but a bit time consuming. I just looked it up on google to see how to season it. Very simple and I've loved cooking with it. HEADS UP on ONE problem the lid knob gets very hot and you need to use a hot pad to remove it. I almost burnt my hand the first time as didn't realize that part would get so hot!

For the price, I think you'll be pleased.

Another note, many have complained about the heaviness of the pot let me just say my opinion. It's cast iron and will be heavy. However, I am not having any problem lifting it!

I like this cast iron dutch oven. Have used it once now to cook a large chuck roast and vegetables. Turned out very good. Actually replaced my last crock pot with this dutch oven. I think I'll like it better.

The latest crockpots simply don't adjust the heat like I want any more. Now I can do the slow cooking in the oven with better results.

It's a good product. Supposed to be pre-seasoned and I used it that way. Did wipe it with a little olive oil after the first use. Like I do with my other cast iron ware after every use.

It is heavy. Would not want one much bigger and/or heavier.

I bought this to replace a kettle that I bought 10 years ago for $10 that just decided to start leaking.

This takes a good deal longer to get to a boil and when it starts to whistle it will immediately spew like Daffy Duck.

The plastic of the lid has already cracked so I am sure I will be reviewing another kettle soon.

The handle is nice as it gives you some distance from the kettle and doesn't get hot.

I cannot say that I love it, but I dont hate it either.

The first time I used this pan I tried a box of yellow cake mix (the kind with pudding in the mix). I followed the baking instructions for the "Butter Shortcake" recipe that came with the pan, 325 degrees for 20 minutes. I also put a baking sheet under the cake pan. I used Wilton "Cake Release" and let them cool for exactly 10 minutes before I easily removed them. Although they were fully baked, there was no browning on the outside so the basket definition just wasn't there. They looked more like the regular store bought shortcakes. Looking at the picture on the box it seemed to me they used a much denser cake recipe similar to a pound cake. So, for effort #2 I tried the "Butter shortcake" recipe that came with the pan. DISASTER!!! They stuck badly, and again, seemed underdone and pale in color. I finally decided to try my no fail Rum Bundtcake recipe (just google Bacardi Rum Cake) which always produces a nice brown crust. Instead of rum I used Grand Marnier. Baked it at 325 for 20-25 minutes, until the tops were a nice dark golden brown (unlike the previous attempts). I did not use a baking sheet underneath this time. Although the basket pattern is still not as smoothly defined as the photo on the box, they turned out nicely browned and I am satisfied enough to serve them for Mother's Day. I plan to glaze prior to filling them which I hope will help bring out the basket pattern some more. I probably would have given this product more stars had it not taken 3 attempts to get a satisfactory result. Has anybody out there produced a finished product that looks like the one on the box? If so, I would love to hear how you did it!

By the way, I have used the Nordic Ware mini bundt pans with the Rum cake recipe and they always turn out great.

A bit pricey but after using them I am definitely glad I made the purchase. Make with chocolate cake and fill with chocolate mousse or white cake and fill with chocolate pudding and top with whipped cream and your guests will marvel. Of course, the usualfill with berries, etc., and pipe on a little whipped cream ...all make for spectacular desserts.

A few tips: Make sure to spray well with a flour cooking spray for easy release. Just cover the flat surface with batter if you want a little smaller cake (not as high). If you don't have one buy a large pastry bag and a large head for piping in mousse, whipped cream, etc.. Alsouse half steam pan aluminum trays with the edges twisted up for easy storage of 6 muffins if you like to pipe filling on high.

These will get tons of use. You might want to buy 2 for convenience.

I used this pan for the first time today I almost forgot I had it until my boyfriend brought over some strawberries and suggested shortcake. The pan came with a recipe but I already had a white cake mix I wanted to use up. I checked everywhere on-line for tips on using the pan with a mix but to no avail. Here's what happened. I baked the first batch at 350 degrees for 21 minutes a little overdone, but edible. I put a little too much batter and it ran over the top. As suggested here, I used ALOT of floured cooking spray and they popped right out of the pan, but they didn't look much like the picture. The second batch, I used regular cooking spray and didn't put as much batter in, and only left them in for 19 minutes. They came out much better, but still the shape left a little to be desired. I think if I bang the pan down on the counter a couple of times to get rid of the air pockets, they will probably come out much better shape-wise. All in all, I'm please with the pan and hope my review helps others in my situation.

This is a great piece of cookware. It's excellent quality, dishwasher safe, and large enough to cook extra of anything. I am so happy I found it at Amazon and loved the price, too. [Edit 2/22/13] I saw some critical reviews due to this being "tall & skinny". I find that to be a plus. I can use this 8-qt with my 12-qt on burners that are adjacent. I wasn't able to do that before. Despite appearances, 8-qts is 8-qts and the pot will hold....8 qts. This is perfect for soups, stews, or anything else you want to make a big amount of. True, a turkey wont fit but don't you need a roaster for that?

I broke a couple of my mother's dishes so was happy to find these. Mom's older Dansk dishes have "Made in Portugal" on the bottom, these Dansk pieces do not specify a country. These plates are heavier than hers and look slightly different from the side. She's happy w/ these as they match when viewed from above (you can't tell the difference when the table is set).
