If you wish to make the French pastry Canele de Bordeaux (also spelled/called Canneles Bordelais), the proper way to do it is using these traditional, tin-lined copper molds. Copper molds produce results that are far superior to that which can be achieved with Silicone molds by creating the requisite, carmelized, exterior "crust". Copper is an excellent conductor that is why copper pots and pans distribute heat so evenly and quickly. It is also why electrical wire is made from copper. Silicone is not a good conductor and accordingly does not transmit heat readily that is why oven mitts are often made from silicone and why, in electrical applications, silicone is sometimes used an insulator. As a result, silicone molds can produce a blonder or unevenly carmelized crust. In addition to that, copper molds are simply more fun to use than a floppy, synthetic mold. After all, the act of cooking can be enjoyable as well as eating what is created and these beautiful, copper molds help make it more so.

These molds are the traditional 2.1 inch (height) size. Smaller, copper molds are available, but this is considered the appropriate sized mold for Caneles. Be sure to season the molds before the first use coat interior with vegetable shortening (e.g. Crisco) and heat in oven at 350 for one hour; flip upside down and heat for five minutes to drain oil; leave molds in oven as it cools down. Then find a good recipe and create these wonderful, handheld desserts. Martha Stewart's "Baking", Paula Wolfert's "The Slow Mediterranean Kitchen" and Pascal Rigo's "American Boulangerie" all have recipes, each of which differs slightly from the others. It is worth noting that Martha Stewart's recipe for caneles in the book "Baking" is different than the Stewart recipe found online. Try using the "Look Inside" feature for the Stewart and Wolfert books on Amazon and run a search for "canele" to get a peek at the recipe.

Wash using water only so as to ensure the tin surface stays seasoned with oil (soap would remove it). Soak if necessary to remove hardened sugar crust from Canele batter. When the molds have been properly seasoned as noted above and are then oiled before each use with a mixture of beeswax and sunflower oil or just oil, the Canele should release, but if does not, gently go around the top edge and/or down the ridges with a toothpick or wooden kebab skewer to release any part of the crust that is sticking to the mold. Do not use metal since this will eventually scratch the thin coating of tin from the copper. If after much use the molds smell rancid, boil the molds and season then them as done when new.

The molds are expensive and given the long cook times (up to two hours), you will most likely wish to have at least eight molds, and possibly twelve or more, but after you produce your first batch of Caneles, you will quickly forget the cost. Pictures I posted in the customer Images section provide an idea of the results that can be achieved with these molds.

When I first tried Caneles, I was studying abroad in Bordeaux. Several years later, I ran across Paula Wolfert's recipe for these tasty treats and decided to try making them myself. Originally, I tried to make them with the silicon molds as $20 a piece seemed a high price (even with the Mauviel name attatched). I had a modicum of luck with the flavor of my French pastries made in silicon molds, but to be excellent, I knew that I had to use beeswax and real copper molds; otherwise the outer shell was neither crispy nor did they have the almost bitter taste of burned sugar.

I bought 10 of these molds as a serious investment in my favorite dessert and have been more than pleased with them.

I have made several batches in the past few weeks and every batch has been as good as those I remember tasting in France.

Be sure to properly season the molds before first use and equally important is to not use soap and water to wash out the inside after use.

These are a great buy and worth the money if you love caneles.

Best canele mold. Tried silicone one and was very dissappointed with the texture. This mauviel mold makes the outside of the canele crunchy and the inside creamy. I own 12 of them and it's an investment but well worth it.

My son gave me four of these molds as a wonderful birthday gift! They are beautiful and their use resulted in a perfectly crisp, carmelized crust, with a creamy, custardy interior. As for baking with them, I highly recommend watching Albarock's YouTube video on making cannelés! (It is in French, but there are some English translations and you can get the gist of what he means, by watching.) He says to use lots of non-stick cooking spray on the molds and to be sure to tap the cannelés out while hot from oven. (Use oven mitt!) That technique worked perfectly for me! I didn't season the molds, the cannelés popped out and nothing was left behind. But go watch the video -it will make you confident and lead you on the path to making amazing cannelés!

I had the older version of this skillet. It was half the price but only came with one pan. I loved it. The nonstick coating was virtually indestructible. I used metal utensils in it all the time and never got so much as a scratch. Well, I became so confident in the strength of the coating that I used a steak knife to cut a steak in half while it was in the pan to see if it was done. It wasn't knife proof. I guess I could have just ordered a replacement pan from Zojirushi, but I decided to buy this EP-RAC50 instead. It's better than the old one was. It's a little bigger, a little nicer looking. But I really like having the two pans. I can brown meat for spaghetti in the grill pan, and then boil noodles in the other. I don't even use the stove top anymore. You don't have to worry about pans being centered on the burner or sitting flat. Plus you have much more precise control over the temperature. It heats very evenly and the thermostat seems to be very accurate. I also like the fact that the nonstick coating is NOT Teflon, which is carcinogenic. And it's much more durable than Teflon. I don't need to use oil or butter because nothing sticks. Not even eggs. It wipes clean with a dry paper towel! Another nice thing is that you can remove the pan from the base so there's less chance of burning your food when it's done cooking unlike with some cheaper skillets where the pan and heating element are one unit. If this skillet breaks, I'll buy another one. It's worth every penny.

Gets hot quick.

Keeps the heat it is set for.

Cooks to perfection (so far).

Glass top makes it "fun" to use and see the cooking process.

A 2lb. meatloaf made in this pan was the best I've eaten and I didn't have to use the oven.

Next up is: Roast chicken and baking.

Wish:

1. That the pans were perfectly flat. The pans slope slightly to the outer edges and more oil is needed to compensate for the depth of the oil at the center. So trying to cook with less oil is difficult because the oil gathers toward the edges.

2. Hope they can make a Wok like pan insert that can be purchased as an option.

3. That the cover be tight fitting with the vent in the cover.

Other than that the product is the best electric skillet I've used.

I would recommend it to anyone.

How does it hold up after 6 months of use Feb. 2010 thru July 2010:

1. I only use wood and plastic utensils but the Pans scratch very easy and $77 plus to replace just one pan.

2. The manufacturer won't stand behind the pans unless you send it back to them for evaluation.

3. Even though the pans scratch, they clean-up without scrubbing. Very easy....

4. Pans are not flat is still my biggest issue.

Still, the Zojirushi is the best and most versatile electric fry pan I've used.

I use it at least 4 to 5 times a week and I would but it again.

I wish I had this in my apartment living days! I got this as a present for a hotpot party from my husband.We were expecting 12 people over and I'd been using my cusinart fondue pot (which has worked when it's 4 to 6 of us). I have another electric skillet but it's old, cheap and not reliable. Hubby got this and (1) sticker shock, holy crap! (2) wow it's big! it's really big. I had thought about returning it b/c of the cost. I'm glad I didn't.

We used this as our non-spicy hot pot. Poured some seasoning, broth and water, bam ready in a matter of minutes. It boiled the broth. I was surprised. So this is great for a decent size group of people. It didn't burn my food it kept the broth at a stable temperature. The meats/foods were cold (refrigerated/frozen) but we didn't notice any drastic temperature changes. Even heating for all uses (steaming, boiling, pan frying)

It's also a pretty looking machine, very easy to use, very easy to clean! Non-stick for real and just a wet soapy sponge, and everything comes off. The nonstick coating is still working even after all the abuse of metal utensils, chopsticks, spatulas, whatever.

SAFE! If you happen to knock/trip on the power cord it'll pop off magnetized so you don't have to worry about the whole pot going with it. The handles on the pot stays cool even if the pot is boiling.

UPDATE:

I've steamed a whole fish (4lbs)!! I used the steamer rack with some ginger and scallions, let the water heat up, put the fish in, 10 minutes later, the softest, silkiest tender fish ever. It looks big at first but it's perfect even for 2 people

Steamed tofu with ginger/scallions same as above, also delish.

Soups easy peasy, used the large pot, browned the meat, threw in the veggies, then stock done!

Green Chile browned my meat and caramelized onions, threw in all the other ingredients and seasoning let this sucker simmer for a day...meat is so tender and flavorful, the chile was a hit.

Use the shorter pan to brown potstickers

Temperature settings are great! I haven't used my crockpot since we've gotten this it actually COOKS the food not just keeps it warm.

It can get REALLY HOT, or simply keep the meal warm.

No more 'hot spots' is one of my favorites! The pans heat evenly.

I love having two pans. I have used it for everything from soup to stir fry.

It has earned the title of 'Super Pan' in our house!

I needed a new electric skillet, and didn't want to go another round with the uneven heating and flaking nonstick coating I've come to expect with the "disposable" $30 skillets from the usual sources. So I decided to drop some $$$ and get one that would be a real piece of cookware instead.

The Zojirushi arrived, and I was first surprised at how really large it is. I have normal kitchen cabinets, and I wasn't sure I could even find a place for to put it. But I figured that's a small price to pay for quality, and moved on to the instruction manual.

This electric skillet is a workhorse that will do far more than I expected from just a skillet. And there are instructions for all of it. But then I came to the "Care and maintenance" section.

It turns out that, the main pot must be hand washed--no dishwasher. Call me lazy, but that's a dealbreaker for me. It also requires a rubdown with vegetable oil to prevent rust, and rust is a dealbreaker even without calling me lazy. Finally, storage instructions were very clear that things had to be stacked in a particular order to avoid bending this or warping that.

To sum it up, I returned the skillet. It looks like it's really versatile and appeared to be extremely high quality and worth the $150 purchase price if you're comfortable with the service you must provide in return.

I purchased this in hopes that I wouldn't have to continually wipe the wine drop sliding down the bottle and prevent wine stains on my white counter top...it works great! For the price, you can't beat this gadget. There are alternatives however. I have seen the round discs that you can curl and insert halfway into the top of the bottle, which creates a thinner edge, preventing the "run down" effect.

I love my rice cookers. I use them not only to make rice, but for all sorts of one-pot meals. Put in a cup of rice, vegetables, meats or seafood, seasonings, tofu... and a half hour later you have a steaming hot one-pot meal. They're also good for pilafs and other grain dishes.

The Zojirushi and Panasonic units are all first rate, BUT you need to know a little something about cooking rice beyond what's in the poorly worded manuals.

Different rice takes different amounts of water. The long-grained rice Americans are used to should be cooked with 1-3/4 cup of water for each cup of rice. Japanese rice needs only 1-1/4 cup of water for each cup of rice, or 1 cup of water for each cup of washed, wet, rice.

Many Americans (and Europeans) have problems with these cookers because the measure ments are calibrated for Japanese short grain rice, and the Westerners are cooking long grain rice. Get the ratios correct, and everything works out fine.

I've had a number of rice cookers of different sizes. My Panasonic has lasted over 20 years, and my Zojirushi looks like it'll last just as long, while my South Bend gave up the ghost after only a year. Go with the top Japanese models; they're made for day-in and day out cooking.

(2008 HOLIDAY TEAM)For a long time, I didn't see a need for a rice cooker. What's the big deal, I thought, of cooking rice on the stove? However, as my life got busier and busier, I began to want one. For one, I cook rice at least twice a week, often more. Second, I thought it would be convenient to start up a rice cooker and then not worry about the rice until I was ready to put dinner on the table. This Zojirushi model is perfect for this. After the rice is cooked, it automatically switches to a "Keep Warm" setting.

A few tips about cooking rice in this model:

1. Follow the water/rice ratio directions on the rice box, NOT in the manual.

2. Fluff the rice when the cooking is complete and then let it steam longer on the "Keep Warm" setting. If you don't fluff, sometimes the rice browns a little on the bottom.

3. Use high-quality rice.

Although I rarely use converted rice (Uncle Ben's Original), I decided to give it a shot in this cooker. The results were barely satisfactory, since the rice browned on the bottom. I don't have this problem with jasmine and other premium rices. I suppose unplugging the appliance immediately after the cooking is done (and letting it steam without the warmer on) might help. My own solution is to stick with the better rices.

Other reviewers have noted a spitting through the steam hole during cooking. This is less of a problem with small quantities than large. The starchy steam doesn't bother me since the same thing happens to the side of a saucepan when I cook a lot of rice on the stove. The cooker is SO easy to clean that I can't imagine complaining about a wipe down of the counter. (Hey, I have to do that anyway!)

You'll be surprised by how simple this appliance is and how well it works. Recommended for people who cook small to medium amounts of rice at least two times a week.

I've used less expensive rice cookers, but they don't measure up to the Zojirushi rice cookers. I used to have the 10 cup model, but that one was a little too large for me (it would be great if you're cooking rice for more than 5 or 6 people). This 6-cup cooker is perfect whether you are making 1 cup or 6. Just put the rice in (remember to wash it first), add water up to the line indicated, and push start ... when it turns off, you have perfect rice. No more boiling water, stirring, boiling over, or burned pans!

We bought another brand and the rice stuck , and it was a mess to clean. Someone told us about the elephant on the front and we got one, little more money but well worth it. The non stick pot is great, and very easy to clean. Tips: For less mess when the water boils to the top of the lid,take the lid off until the water boils down to the rice then put the lid back on. When it shuts off stir with the spatula. Another tip: Use one more cup of water than the book says. It comes out great! try it you'll like it.

My husband is asian and between him and all of his family, I have been around MANY rice cookers all different brands. And I just want to say that NONE of them have EVER spit water on the counter or got the counter wet, or even moist. It is an obvious flaw in this appliance, and definately not worth the ...price tag. You can get much higher quality rice cookers for that price. All the ones I have seen used in my husband's family have the flip top lids (look at the other Zojirushi models). You may want to try one of them instead of the glass lids. And don't worry, the rice will still come out perfect.

This is a nice quality product that works perfectly on all 8-inch Calphalon One Infused Anodized products. Just make sure you are using it for that set only. It will damage or not fit other Calphalon products that the lid was not meant for. The poor reviews I have read here are all from user who are trying to use the lid on products that are not Calphalon One Infused Anodized products.

These lids are fit only Calphalon One Infused Anodized. I tried put it on other calphalon products but it does not fit at all. Calphalon One Infused Anodized cost you more than other calphalons but you are able to use metal utensils without damaging a surface. I'm very happy with them.

I bought this lid to use with my 8-inch saute pan (part of the 9-piece Calphalon commercial hard-anodized cookware set), but its slightly too big. I would like to point out that if you go to the Calphalon web site, this is the lid listed as fitting the 8-inch saute pan.

The lid is usable, but doesn't seat well to get any sort of seal on the pan. It's unfortunate, as its an attractive, well made lid, but for my purposes its useless so I am sending it back.

I also have the 10-inch stainless steel lid, which fits the 10-inch saute pan perfectly. I'm not sure why Calphalon didn't take more care designing this one.

I'd give it zero stars if I could. I read the review from 2005 and hoped that was just one bad batch--but it isn't. The lid is slightly too large and if used on a non-stick pan will damage the non-stick surface since it sits on that instead of the lip of the pan. So, I have returned it. Note that this is just a problem with the 8 inch lid; I also bought the 10 inch lid and that one fits perfectly.

Wish I bought the whole set. By far the best I ever owned. The first best pots that I owned was All Clad. These are much better and esthetically beautiful. They are solid but at the same time not as heavy as you would think. The glass lid is great. It does not fit tight, so do not be surprised. It is not locked in place. You can hang the lid on the pot as your cooking or stirring your food and prevent condensation drips on your cook top. That spells less cleaning and it is so convenient. The handles stay cool and they are attached to the pots exterior not the interior.

If you like to cook and have the money then you will not regret your purchase. You really do get what you pay for. These are the real deal.

It's hard to find small cooking spoons with a short handle like this. I have had no problems with breakage so far. Of course, these tools are meant to use when cooking smaller things. I would not try to turn a pot roast with the flipper, for instance but it works great for burgers and chops in my sauté pan . Also, because it is fairly stiff and sharp-edged, the flipper makes a great in-pan chopper for fresh mushrooms and such. The spoon is just right when working in a smaller saucepan. I have ordered three sets so far, mostly for the small spoon. I would not use on the grill, or leave propped over/in a pan on a gas stove. My stove is electric induction, and my pans do not get too hot up the sides, so no heat problems for me. 4 stars because I can see how others might find these too brittle for their use. Just have to use a light hand!

I wanted a small set but the spoon snapped at the handle the first time I stirred a casserole with it. The flipper lasted a couple of weeks longer but also snapped of at below the handle. Would not recommend this set.

This is definitely one of the better cup infuser's I've owned. It works just as described. It has an attractive green cover and is easy to clean. The only problem is that only one side of this infuser is mesh. The other side is plastic like the rest of the shell with holes. So when using loose tea , debris does go through those holes and end up in my cup. But it depends on the type & size of loose tea I use. Still at least it leaves less debris than my previous infusers. If both sides had the fine mesh it wouldn't leave any debris and would be better. That's the only thing that keeps me from buying a few more of these. But I am not unhappy with my purchase either.

If they ever make this in metal instead of plastic and make both sides mesh I go and get 4 more of them as I drink an insane amount of tea. But with a product that's only "almost" perfect one is good enough. It has replaced my previous infuser.

Update: My friend introduced me to the toby tea-boy infuser which unfortunately isn't sold on amazon. It's kindof like this infuser only it doesn't have the fancy plunger and BOTH sides are fine mesh so NO DEBRISno matter how small your loose tea is cut. :) So now the Toby has replaced this infuser for me. I really wish this had both sides mesh because the plunger is really useful to stop tea waste. Hopefully they'll change this.

This is the WORST product ever!! You CAN NOT scoop loose tea into it, you have todo with hands or spoon. When the squeeze feature is used the whole thing opens and all the tea falls out. It is poorly made and all the parts come apart. I have NEVER been so unhappy with a product I bought online. It's a waste of money!!! (if i could give it no stars I would... HORRIBLE!)

Why didnt someone come up with this before!!?? Works with loose teas and bag teas. I am trying to be more of a tea drinker....this will help quite a bit. Actually "plunging/squeezing" the tea is what makes this so genius. Holes are quite small so you wont be getting large particles in your tea.

This was a gift for my mother for Christmas. My parents always have the whole family over to their house for Christmas and they are coffee drinkers. This has always been a problem because space limitations and lack of availability of larger coffee makers that would fit in has always been a problem. She'd always have to make 2 pots and eventually, people would wind up with cool coffee since not everyone wanted it at the same time. In comes this Zojirushi SRAG30 Airpot. Now, not being a coffee drinker myself, I did a lot of research in advance. As there wasn't a lot of feedback available for this particular product, I don't know if I just got lucky in picking it or if the limited information was just that accurate, but this thing is literally almost unbelievable. Not only was the coffee made 3 hours before the first cup was pourted still hot when the last cup was poured, but it was hot the next morning, 20 hour later...and still steaming hot the next evening, 30 hours later. This morning, the coffee coming out of it is still apparently steaming. Now while I'm sure it's much cooler than it was when it first went in, the fact that I can still see visible steam rising from what's coming out of it coming up on 2 days later is just amazing. I couldn't be happier with this purchase.

Now, the scientist in me knows not everyone will get these same results as some external factors most likely played a part in this. For starters, when preparing it for it's first use, I boiled water (raging boil, not just hot tap water) and filled it. I then proceeded to close it up and pump out the hot water which would have increased the pressure of the hot air inside, warming it more. Then after the coffee was put into it, I put it on top of the stove, on which the oven was running periodically throughout the day. I'm sure this helped to keep it hot. However, this was during the winter and a nearby window was open much of the time, so there was also a cooling factor as well.

Overall, I can't say enough good about this product. While not the most extravagant gift I purchased this year, it may turn out to be the best as far as doing what it's meant to do.

I bought this pumper to replace one manufactured by the same company I have had and used for about fourteen years. The earlier model has a glass reservoir. The Zojirushi Stainless Steel Easy Serve (pumper) has a stainless steel reservoir, not all of their models have a stainless reservoir. I perk a pot of coffee, the old fashioned style, every morning and put the coffee into a pre-heated pumper. I drink coffee throughout the day and the pumper keeps the coffee hot all day long. The older model kept fluids hot only about half a day. The unit is easy to take apart and clean. My grandmother had a restaurant in San Francisco for over forty years. We purchased our coffee and coffee related equipment from "Farmers Brothers" and the salesman gave me a great hint about cleaning stainless and glass coffee ware. Use "Seventh Generation" "powdered" Dishwasher soap. It is the same stuff that the commercial coffee suppliers sell as coffee equipment cleaning powder and is much less expensive. You can find it at the following grocery stores: Raley's, Bel Air, and Nob Hill stores. I have also found it at some health food stores as it is considered a "Green" cleaning detergent. Be sure to thoroughly rinse the pot and the pumper tube before using the pumper after you wash it! The bottom line, I REALLY like the pumper and I think you will too!

Does a great job keeping tea or coffee hot. Second day beverage is still warm. Third day, lukewarm. As good as what's in the coffee shops. Only improvement I would like is a wider mouth to make cleaning easier. Would highly recommend buying this product.

I don't think this airport keeps the coffee very hot unless it is filled to the brim each time. It takes almost 20 cups to fill to the top. Maybe I should have looked for a smaller version.

I have the yellow and orange in 2 sizesthe large and mediumand I could not be happier. It coordinates well with my le creuset (orange) and my bodum (orange) and my Fiesta (yellow and orange). It is very pretty table wareand makes a lovely serving dish, but it also cooks very evenly, and the handles don't seem to get hotat least not when you cook in the microwave. I still use my hotpads just in case, but once accidentally I reached in to take it would bare handed, and the handles were not hot. I don't know if that was an anomaly or that's a feature, but I thought I would mention it. Because this is not made in China, and France has relatively strict laws about glazes, I feel comfortable believing that the glazes are safe (as the company claims they are). It's getting hard to find cookware that you can feel safe usingmy Fiesta made in the US with lead free glazesis the only dinnerware I really feel comfortable eating on. You can put these in the diswasher and you won't damage them at all. They are safe, capacious, pretty and they are not super heavywhich I like. They also stack really wellwhich helps you if you have storage issues. I don't have a lot of free cupboard space, so I really appreciate how neatly these stack

Whoopshad to take away a star from the latest shipment of this product. It was not packed correctly, and the handle broke during shipment. I am getting a replacement (hopefully in one piece)but it was annoying to have to pack the broekn one up and send it back.

editI have received the replacement in one piece. It was no better packed than the one that brokeso if you order these just understand you may have to get a replacement.

I purchased all 3 sizes of this item. Imagine my surprise when only a month later, one of them split at the handle. I used the medium size the most frequently, and the silicone just split open where the handle connects to the turner area. There feels as if there is a rigid material to reinforce the handle itself, but the junction is where it broke. I like the product(seems to do what it says it will) but did expect a bit more durability for the price.

This left-handed spatula would be better if it was about an inch shorter. It's a little to long to be comfortable in the hand when working with a small pot or pan.

5 stars for the sturdy, easy-to-grip handle; 1 star for the overly flexible nylon flipper that bends under the weight of any food. I really want to like these because they look cool and have a nice handle, but I've had nothing but flipping disasters with them. Because the flipper part flexes so much, the pancake bends the nylon and slips off before you can get it at a controllable angle. We purchased the small, medium and large sizes. The small one is less flexible, making it more controllable, but it's too small to reliably turn larger things, like a grilled cheese sandwich, and is also too small for turning pancakes. And while the edge is thin for plastic, the plastic flexes, so you can't press it down enough to slip easily under the food--it just bumps the food over in the pan, distorting the pancake or mashing it into the one next to it, ruining them both. The surface of the flipper is textured to keep the food from slipping off too easily, but it also makes it hard to get the food seated on it if you do manage to get under the edge. I dig past these in the drawer to reach for my reliable, thin-edged metal spatula.

This is a great product. The handle is very comfortable and easy to grip. The blade is thin and flexible so you can really get under things. I love that it's a metal blade because it will truly stand up to heat. It seems plastic turners always melt no matter the heat rating. Also, didn't realize when I bought it, it's angled for lefties. For me that's great but maybe not for others. Wonderful product. One of my go-to kitchen utensils. Have owned for 2 years and still good as new.

I had a spatula just like this one but in green and it lasted forever until I decided to use it as a fly swatter at which point, 1 it cracked and 2 yuck, I wasn't going to use it anymore for food. So, I bought a brand new one and am very happy with it.
