I have been baking professionally for five years and although these sorts of lames may be useful for someone who wants to experiment with a loaf of bread a night for one week and then never bake again, one blade does not last half a shift in front of my oven before getting dull. A much better solution is to buy a package of double-sided razor-blades. We use Dorco brand which are 12 dollars for a hundred on amazon, although I'm pretty sure all brands are identical. They can be very easily fitted onto just about any rigid stick, such as a popsicle stick cut in half length-wise. Just thread the stick through the two larger holes in the middle of the razor blade so that it forms a convenient curve between them. Voila!

Several years ago when I began baking artisan breads, I purchased one of these baker's blades. I fell into the novice baker's trap and purchased almost every item the professionals recommended in their books. This is one of the few that I wish I had not.

As a number of other reviewers have said, I would have been better off saving the money and purchasing packs of double-edged razor blades. Not only is this item cheaply made, but the blade I received was not particularly sharp. Even with a light touch, the cutting edge drags and I rarely get a nice, clean cut. Occasionally, I do manage to get a clean cut which is the only reason I gave this product two stars.

I definitely do not recommend purchasing this baker's blade. Even if it goes on sale or is offered as a 4 for 3 item, it isn't worth adding to your Amazon shopping cart.

This is a very cheaply made gizmo the size and quality of a plastic fork you'd find at a fast-food restaurant.

It's got a double-edged razor blade in it with a little cover, just like the photo.

If I wasn't crazy for the idea of having one for my bread-making, I'd send it back.

It looks like it might have cost about 10 cents to make .. good business for the seller .. a ripoff for those of us foolish enough to think we need one.

You'll be better off with a good sharp knife (like a Kuhn-Rikon paring knife) which you can use for other purposes as well as scoring your bread.

I have tried everything for slashing my artisan loaves...including but not limited to: double edged razor blades (hand held with care!), a double edged razor blade held on a coffee stirrer, a sharp serrated knife, a sharp straight edge knife, an exacto blade (various types), and even scissors (for boules). I read the lack luster reviews, but decided to go ahead and give it try. I have made many unsatisfactory purchases that have cost me much more, so I didn't figure I had too much to lose. I am glad I gave it a shot. Yes, it probably cost the manufacturer ten cents to make. No, the blade is not replaceable. BUT...the blade is curved on the end, which gives you the ability to slash the loaves without having to work around the blunt end of a razor blade. A lot more control than a flimsy coffee stirrer. I usually have to let the loaves dry out a bit before slashing to get any kind of "ear", but this sliced through my wet loaves with ease and precision! The loaves were absolutely beautiful, with no learning curve (pardon my pun!). I agree that if you are looking for a straight cut, this is probably not the tool you will want to use, but for baguettes and other curved slashing, it worked like a charm. I would have saved myself many years of aggravation if I had invested $10 in this product long ago...

The blade is not replaceable. So what? Let's face it, a blade is not going to get a lot of wear and tear slicing through wet dough. I produce about 75 pounds of artisan bread per week in a commercial venue. I figure this will last a good 6 months, and for the average home baker it should last a year or two. If you keep it clean, keep it dry, and keep the cover on it you should be good to go for a long time. Of course it may fall apart in a month, in which case I will be back to revise my review. But for now I am pleased. I couldn't even buy three lattes for the amount this item costs...I give it a thumbs up!

or oval loaves, a straight blade should be used. The curved blade will

I bought this knife almost three months ago, and have been nothing but impressed. I am a professional chef and have used this blade almost non-stop since its arrival. Despite daily use and infrequent passes on a global ceramic steel, it still remains near razor sharp. The feel, the balance, the way the blade will hold an edge, everything about this knife is amazing. It has quickly grown to be my favorite knife, surpassing even my ceramic knife which cost me three times as much and hasn't held up nearly as well. Only complaint I have is because of its heavy weight, delicate cutting such as basil julienne (which I do frequently) are exceptionally difficult without bruising the herbs. Its possible to do the job with the knife, but not really what it was designed for either in my opinion. Every knife has its purpose, this is the best general purpose knife ive ever used.

If God's mighty Hands are big enough, He definitely uses the 8 1/4" heavyweight Global. If not He wields a mighty regular 8".

These knives appear at first like Pacific Palisades yuppie display pieces, purchased to never be used, highly crafted but without mind towards function. Nothing could be further from the truth, however; these knives mean business. Built with Japan's modern chefs in mind, they have the balance of a Katana, highest quality steel and a wicked edge. They're suitable in construction and balance for everything from sashimi to butchery.

This heavy knife (Global actually refers to the heavier knives as "forged", probably because their lighter knives have ground hollow handles) can deftly mince shallots or rip apart a chicken in the same breath. The balance is so perfect that it really feels like nothing at all in your hand.

Care and feeding are trickier than a Henckels or a carbon-steel knife; the molybenum/vandium alloy is extremely hard and hard to influence outside of a full grind. I'm using a ceramic finishing stone to hone the edge (which does slip around; a downside of the extremely acute angle of grind), and I expect that I'll have a professional grind it when needed, something I don't do with my Henckels knives.

I'm buying the lighter 8" knife as well, now that I've had my hands on it. I really think that between the two of them there's nothing you can't take down.

I've been a professional chef for almost a decade now, and I've tried dozens of high-end and mid-priced knives including Shun, Calphalon, Henckels, Wusthof, Furi, and plenty of others. This is the best. Hands down. I had previously purchased the G-2 chef's knife and really loved it, but it just wasn't quite beefy enough to take down things like sweet potatoes, butternut squash, or cleanly cut through a chicken spine. The extra blade thickness (and weight) at the hilt is a huge advantage for tasks like shredding cabbage for slaw or finely chopping herbs. That being said, the knife is balanced so well it feels like a part of your arm, and is sharper than some of the ceramics out there. the steel is harder than all but the most expensive german lines, but it flexes more than the folded japanese knives. The result? The Global cuts smooth as buttah, stays sharp longer than a Pro-S Henckels, but doesn't chip or crack like a Shun. It's also just a really beautiful and elegantly designed piece of steel. Showroom-quality, as they say. The one real caveat is that you really need a ceramic honer to keep the blade in top form. Standard chrome or diamond steels just don't hold up. I recommend the Wusthof Ceramic Honing Rod. 5 years in, and it hasn't lost a bit of its grit.

Invest in this knife (and a good sharpening stone). It is heavy but with experience, that's a good thing. "Let the knife do the work" and all that. I got used to the weight quite quickly.

I have regularly used German, Swiss, and American steel blades and this Japanese Global puts them all to shame across the board. A bit higher on the price scale than some of it's "competitors" (if you can call them that), but it MORE than makes up for it in performance, durability, ease of use, comfort, and craftsmanship. Hands down the sharpest blade I've ever worked with. I highly recommend that you hone this knife on a soaked wet stone rather than a traditional steel though, as it takes a 10 degree angle on the blade edge, where most every steel is designed for a 40-45 degree edge. Probably the last chef knife I will ever need to buy.

I have had other Circulon pieces. While this is only a 1 qt. saucepan, I felt it could be made sturdier. It should be a little heavier. Also, it's not well balanced. I needed it and used it before I realized it's deficits. Not terrible, but I wouldn't buy again.

I have several pieces of the Le Creuset pieces. I love all of them. I bought this to use as a sugar bowl. I wanted it to match my other Le Creuset canisters and crocks. The regular sugar bowl is prety small so I thought this was really pretty and could be used as that. I ordered two of them. One for honey and one for sugar. (The Le Creuset Honey pot is yellow and I didn't want one that didn't match my other items).They look nice on my counter. They arrived quicker than I expected.

I purchased these to go with Corelle plates that I purchased and they matched my pattern. I assumed they would be "Corelle" these do not say "Corelle" on the product anywhere, on the bottom the brand name appears to be "Eurita" (it is difficult to read) by Reston Lloyd Ltd. Does not indicate country of origin.

Arrived timely however they are fairly thin and very light weight but they serve a limited purpose.

The lids go on over a raised lip at the top and appear to seal well. The problem is that they are difficult to remove. On the bottom of the product it states they are dishwasher, microwave and freezer "OK". It does not say dishwasher, freezer and microwave "safe". Maybe it is just a selection of words. I have, in the past, always seen microwave "save", etc.

Can not use in a conventional oven or under a browning element.

Update August 11.2011, I failed to mention these are plastic, I used them once and they now sit in a cabinet and will likely see no additional use.

Love this set. I've read reviews saying they are expensive. Everyone has an opinion. Mine is "Wish I could find the same things in a larger size. Love the ventable hood. This set is convenient for small servings but the largest is not very big. I use them daily for various things but when I cook instant oatmeal or grits I need something larger because the grain expands over the sides of even the largest. They are not Corelle material but some sort of plastic which gets rough and discolored after much usage. I wish Corelle made the same kind of Cookware in their tougher material.

We have been minimalists when it comes to kitchen supplies so we had two fry pans in our cupboard. One was a Calaphon and the other was Regal Ware. We got both of them about the same time and the Regal Ware was in near perfect condition still, no chipping or flaking. The Calaphon was in bad shape and the coating had flaked off of half the pan and I knew it was time to get rid of it so I came on Amazon to look up pans. I wanted something by Regal Ware since the brand had proven to hold up to regular use in my house. I found this set of pans (I bought the 8", 10" and 12" and American Kitchen is by Regal Ware) and was really hesitant to spend that kind of money on them but I am so glad I did. These are really solid pans, made in the U.S.A. and covered by a 25-year warranty (that is easy to register for). We coat with oil every 2-3 weeks and absolutely nothing has stuck in these pans. It also says not to use non-stick sprays with them and I balked at that at first thinking everything was going to stick if I didn't use that, but nothing sticks. Eggs come out perfect. These are so nice to cook in. They also look great and are easy to clean up.

**Update August 2012**

It has been almost a year since I bought these pans and the 8" and 10" are holding up pretty well, but the 12" is not. The coating is flaking in spots and things are sticking to it, even after being freshly coated. I just called to ask about warranty coverage and found out that you not only have to pay to ship it to them, but also include a check for $11 to get it shipped back to you. So I'd be looking at about $25 to get one pan inspected for warranty and replaced. On top of that, I was not impressed by the customer service agent and her unfriendly tone. If I was looking to buy pans again, I would be hesitant to buy this set because I'd expect for the cost of them that they'd hold up longer than a year, that their warranty replacement wouldn't be as costly and that their customer service would be at a higher level.

I love this pan. It's a great size just over ten and a half inches across at the top with a very nicely designed slant / curve to the sides that makes flipping things a breeze. Flipping is also helped by the excellently sized and shaped handle good and long at over eight and a half inches and nice and broad so it is easy to hold on to, without being so big or clunky that smaller hands should have a problem. It's also a hefty pan, more so than it may look. Each time I pick it up I am surprised pleasantly by the weight. That weight comes largely from a thick bottom that distributes heat very evenly. The sides are also pretty thick, giving the whole pan including where the handle connects a rock solid feel. According to the company website the pan is made from stainless steel covering an aluminum core that covers the bottom and also runs up the sides.

I think almost any non-stick you can buy these days is going to do a good job at first. This one certainly does. In fact, it's wonderfully slippery. The real question here is about durability, and I can't comment to that for a few more years. The cookware does come with a 25 year warranty. You can see the warranty and register your cookware on their website ( ) if you want. The warranty covers the usual 'defects in materials and craftsmanship' but doesn't specifically mention the non-stick coating, however.

Durability is especially important to me because one of the reasons I like to buy American has to do with the environmental impact of consumer goods. First, I want my stuff to be manufactured with some regard to environmental regulations, and thus I prefer to support American and European manufacturing. But moreover regarding durability, it seems clear that the MOST environmentally sound thing is to not have to buy more products at all. That is, regardless of how 'green' a manufacturing process is, it has more impact than doing nothing and the less something has to be replaced the greener it becomes. The pan that lasts the longest will certainly have a big advantage in the most 'eco friendly' competition. (Cast iron seems clearly to be the winner in any durability competition, but for some cooking applications I prefer this kind of non-stick.) So, kudos to this pan for being made in Wisconsin and appearing so far to be durable.

I'm looking forward to getting the 8" version of this pan at some point, and certainly would recommend this line of pans to family, friends, and... you.

The bottom is not flat. I have a ceramic stove top and the pan doesn't heat up evenly.. Also when I pour a small amount of oil it would roll to one side. It is unusable for a flat ceramic stove top.

All-Clad pots have been in my kitchen for decades, and are great for their shape, even heat transmission, and durability (Exception: just don't buy any of their non-stick products, because they don't last, and you will feel bad to throw out very expensive cookware that's in great shape except for the nonstick coating). I bought this latest pot because my wife and I were continually reaching for the same pot, and we clearly needed a second one. I found it on Amazon at half price, supposedly used, but it came in the original box looking brand new. Needless to say, we are very pleased.

These cabinet organizers are extremely high quality with very rugged construction. When measuring your cabinets for ordering them, be very careful to allow a little extra space for variations and particularly if you have a lip at the bottom of the cabinet opening. I had to build these up to have them clear the opening or I would have had to cut down my beautiful custom cabinets.

It's large enough for me to use in my extra large dutch ovens without having my fingers slipping on a saucy spatula. I love the color as red is my designated meat utensil . It's flexible and has lasted me 2 years and still looks and functions like new. I'm very pleased.

These rubber spatulas are awesome. They are sturdy, but still flexible for scraping. The silicone is all one piece (seamless), so food isn't caught in cracks. I bought this to replace a casserole dish that I dropped and broke. When it arrived, I like the style where the lid sits so tightly on the body of the casserole. However, it was not as large as I thought it would be (in diameter). It is a 2 quart casserole, which I thought would be larger, and the measurements given on your website threw me off. They were in millimeters instead of inches and I had a hard time converting them. As a result, I think I really wanted a 3 quart size. That's OK, though, as I am pleased with the look and way this casserole worked for me. I will probably go back online and buy a 3 quart and a 5 quart! I really like the design of this product with the handles fitting flush to the body of the casserole. Nice piece of design!

I'm a Le Creuset devotee, so it was with some reluctance that I followed the recommendation of a fellow gourmand to order this pot. Now that I have it I L-O-V-E it. It's identical in weight, quality and construction to Le Creuset, except it's half the price. The only material difference is the knob on the lid: Mario Batali's is stainles steel, Le Creuset is plastic (although cheap-looking, plastic is actually more practical because it doesn't get hot).

It's nice to have some unique colors not found in Le Creuset: persimmon (burnt orange) and espresso (deep brown) are both beautiful.

Le Creuset should be shaking in their chasseurs if Mario Batali expands this line to include more pieces.

I was just about to break down and pay the money for a le creuset french oven when I stumbled upon this one. It got favorable reviews as opposed to some other dutch ovens and the price was right, so I snatched one up. The quality is good and I like the fact that it has a metal handle on the cover instead of plastic. It cleans up easily and the color is very nice (I got the expresso). Definitely a great product.

I think I'm a little spoiled in my kitchen. I have some Le Creuset Pans and love them, but not a dutch oven. So I got this for making sauces in. A couple problems, first, the lid's handle is Metal which gets hot which accounts for the first loss of a star. The second star gone is because the heat distribution inside the pan is lowsey, I'm guessing the bottom is not heavy enough, but it's got a definately hot spot problem. And maybe it's only me, because I cook with Emerilware/All Clad pans, so I'm expecting simular performance.

I'll definately continue to cook with it, and for the price it's not a bad pan, but if you have the money, get a Le Creuset. Better heat distrubution and a heavy plastic handle that doesn't get hot.

I had wanted an enamel-cast iron dutch oven for a while now and searched online at many places. The prices were a lot more than I was willing to pay (over $200 for brand names). I found this pot on Amazon, read great reviews, and decided on this one. I am so glad I did! I love this pot! The price is the best around and the pot is of excellent quality. It is super easy to clean as the enamel makes it non-stick. Just of note: it is a very heavy pot (as is all cast iron) that is SUPER heavy with a pot roast in it.

I received this pot for Christmas and I absolutely love it!! It provides very even, steady heat and only requires a low flame to keep its heat. The enameled coating is great. It browns beautifully with minimal sticking and the light color allows you to see the fond very well (little brown bits on the bottom of the pan). The braising spikes on the lid are a bonus as well. To my knowledge Le Creuset does not offer those on their pans. I love the size, too. It is very roomy, but not so mammoth that you cringe having to lug the pan out. And the clean up was very easy. I have always wanted a pan like this but could never afford the hefty price tag of the Le Creuset or the Staub. I am so grateful to Mario Batali for coming out with such a wonderful product at such a reasonable price. I am usually skeptical of celebrity cookware, but this one is a true gem. I can't wait to try some of his other cookware.

If you are using this for a whole pizza, it is fine. If you are reheating a slice of pizza, the cheese will melt on to the screen and it is very difficult to clean up.

These pizza screens we bought didn't work well at all. When we took the cooked pizza out of the oven, we had a very hard time cutting the pizza into slices and getting it off the screen was even worse. The crust was too doughy tasting and the whole point of buying the screen for cooking pizzas with our pizza stone was to hopefully get a crispier crust.

I could never get the hang of my pizza peel, probably because it was so cheap and rough my dough stuck to it and I could never shake it off in one piece onto my pizza stone even with lots of corn meal on it. So I started using a pizza pan, the kind with holes in it, but it left my crust all soggy. So I tried this screen. I stretched the dough and put it directly on the screen (sprayed with some Pam). Then I put the screen with the pizza on my stone and it came out great. The crust had a great crispy bottom but was still fold able like a New York style should be. Now my pizza pan is just used to transfer the cooked pizza onto for slicing. The screen is well built and lightweight. I got the 16" and it's perfect for a large family sized pizza, but I might order a few smaller ones to make individual pizzas.

DURABLE, LONG LASTING: The screen is made from heavy-gauge aluminum, this pan isn't too thin or flimsey. the ring around the outside is also quite thick and flat-rolled onto the screen. Nice, heavy restaurant-style stuff. I look forward to many years of use out of this.

STURDY: I have built pizzas on this thing, loaded up with toppings and sauce, and it is stiff enough to easily maneuver in and out of the oven. I have used it in both a standard oven, and also in my "wave" oven. Fits perfectly in the wave oven, bought it specifically for this application, but it will work well anywhere you are baking. Perfect size if you don't need a huge pizza, but the small size makes it very flexible in use. I think it might even fit pretty easily in a toaster oven too. Happy Baking!

WOULD I BUY IT AGAIN: Absolutely.. and they are so cheap, I bought two of them.. if I was to do it again, I'd probably get three.
