Review of Cuisinart Power Advantage Plus 9-Speed Hand Mixer with Storage Case

This hand mixer is an upgraded version of the Cuisinart HM-70 Power Advantage 7-Speed Hand Mixer, Stainless and White which is recommended by Cook's Illustrated. That version, however, does not have dough hooks, which I specifically wanted in a mixer, since there are increasingly more and more recipes out there that assume the baker has a stand mixer these day and it's not easy to configure all of them to hand kneading. I currently don't have the budget for a stand mixer so I thought this would be a good compromise.

PROs:

Quiet. On lower speeds (1 to 5), it makes merely a vibrating noise. Even when I work with particularly stiff doughs, it still doesn't make a whole lot of sound. This is a giant relief for someone who is upgrading from a Black and Decker model which shrieks horribly on the lowest speed.

Powerful. I've made bread doughs with this machine, some of them quite dense. It always plows through them.

Wide range of speed. The number 1 speed is significantly lower than number 5 which is significantly lower than number 9. This is good for when you just want to combine ingredients without overmixing or having flour splattering every where. Also, stand mixer recipes that call for, say, "put the mixer on medium-low speed" can be easily adapted to this mixer as opposed to my old one, where all the five speeds are kind of the same.

Storage case. I appreciate the extra feature that helps me organize all the components.

CONs:

Dough hooks not very effective. Like I said, I bought this mixer specifically for the dough hooks, and they turned out disappointing. To make them work ideally, you would have to have two sets of hands, one to hold the bowl in place, and one to guide the mixer, imitating the actions of a stand mixer. I've managed to knead a number of dough with the hooks, but it does take understanding and knowledge of how the ingredients are combined to make it work. In lieu of fifteen minutes of hand kneading, you would have to run this hand mixer through the dough for fifteen minutes, so no improvement here. It might be helpful for a new baker intimidated by hand kneading, but it is no less difficult or laborious.

Cord is a little difficult to fold into the storage case. This is a very minor agitation.

Overall, this hand mixer is okay. The Cuisinart HM-70, $20.00 cheaper, may have been a better purchase. If you are looking to buy this mixer for the dough hook feature, I would advise against it.

This is my 3rd Cuisinart hand mixer in the past 5 years and you're probably wondering why I went back to this model after the problems with the first two. First, I liked the form and fit. Second, I had extra blades that would fit (after the first one broke). Third, I assumed the problem was a glitch (each time). On the first and last mixers, the motor just quit without any reason or problem that I can determine it didn't happen because of "bogging-down" in heavy batter. On my second one, the soft tab speed button tore and water leaked in it quit working. Also, I don't think the wire blades "do" mashed potatoes as well as flat blades that actually cut through and break potatoes up into a smoother, less lumpy mix. Another problem that no one else has mentioned is that even though it has a slow start setting, it takes a couple of seconds to kick in! So, initially it starts at a medium speed and flour is all over the counter before it slows down and behaves as advertised. I've finally learned to hold it out of the bowl until it gears down.

We have owned and used this Cuisinart mixer often during the last 4 months, but have become so aggravated with it that we will not use it again. The problem is that rather than having a "slow start" feature, it instead has just the opposite -an annoying "fast start". The "slow start", which Cuisinart's older models (no longer sold) actually implemented very well, is supposed to let you begin mixing without your ingredients being thrown out of the bowl. However, this model (HM-90S) does exactly the opposite -when you turn it on it instantly surges to a fast speed, and then slows down to speed #1 as you marvel at the mess that it has made of your kitchen.

Others have pointed out that you can avoid this problem if you turn it on before you put the beaters in the bowl. However, our frequent use has revealed the true source of the problem: It appears that Cuisinart has implemented a "cruise control" feature, attempting to keep the beaters spinning at the currently selected speed regardless of the load on the mixer. The consistent behavior of this mixer is that if the actual speed of the beaters is ever below the currently selected speed, the mixer automatically tries to compensate by strongly surging the beaters to try and catch up. This is why it surges when initially turned on. As well, the mixer will similarly surge (and surge again) throughout the mixing process if you attempt to mix anything that is unevenly thick (like mixing something thinner into something thicker) -the mixer will instantly surge and throw your ingredients out of the bowl. While the mixer certainly has a strong motor, and the attachments and storage case are nice, its behavior is so aggravating that it is useless.

The woman from Cuisinart demonstrating the mixer has the nerve to brag that it has a "smooth start" feature, as she turns the mixer on at it instantly surges to the fast speed and then slows down to speed #1.

I got my hand mixer almost a year ago as a Christmas gift. I use it at least weekly and it is still going strong. Here is what I like

*9 speeds makes any job possible

*Beaters thin but strong and not placed too close together so that thicker batters can move their way through and things like bread dough are less likely to climb up.

*Motor is strong. It doesn't whine and powers right through tough things like cream cheese (even when you don't let it soften as long as your suppose to.)

*Nice storage area. This doesn't make or break the deal for me. It's been nice not to rummage through the drawers looking for both beaters though.

*The latch release So glad I have to deliberately lift the leaver to release beaters. I don't accidently remove them by pressing the button like on other beaters I've had.

* Cord It is a decent length and it swivels around. I have lots of little helpers in the Kitchen and the cord is long enough and rotates around so I can maneuver the mixer with all the extra hands helping me mix. I'm not saying the cord is long but not too short.

*The appliance is solid feeling. Nothing flimsy about it. That means that it isn't exactly light weight but it isn't cheaply made.

Wisk I've used it to make whip cream and a meringue. It did a wonderful job.

Here are a couple observations/complaints I have.

* The kneader hooks They don't work at all for me at all. When making bread I use the beaters until I have a nice soft dough then knead in my last cup or two of flour by hand.

* Slow start not so much. It starts up at like a 3 speed then quickly goes back to a 1 speed. I still have to make sure my beaters are firmly planted in whatever I don't want to have fly around.

Why did this mixer still get a 5 star when I have complaints? I cook for 5 boys everyday, I make dinners for teachers at the school, I make treats for friends and neighbors...and this appliance has absolutely made doing that much easier. It is simply the best mixer I have ever used!

I've read a couple more reviews and just want to add a couple comments. I am almost always cooking with kids and don't feel it is dangerous at all. When using any mixer you have to watch those little fingers. Also about the beaters falling out...there is one hole that is fitted different. That is so the wisk fits in properly. You will notice on your beaters that their tops look slightly different. This determines which hole they go in. If you put the beaters in and they fall back out...you did it wrong. Switch it around. I've done that and the beaters have fallen in the batter, bummer, but it just made me be more careful inserting them the next time. It wasn't a big deal at all. Also, I have never noticed the beaters not mixing at a consistant speed and I have had many awesome smooth batters (which made very delicious treats too!). Regarding one more review, I don't have any problem fitting everything in the plastic container. I do have to organize it somewhat not just cram it in but it all fits. That's it, the end, I'd still buy this mixer...infact right now I'm looking at it for my sister because I love mine so much!

These are the best beaters I ever owned. I like the "no splash" start on the number 1 setting and the digital display to advance in increments all the way up to a powerful number 9 setting. Pretty light weight to handle yet very powerful. Does a wonderful job and the self contained see-through storage case is extremely attractive and convenient for storing everything neatly in one place. I highly recommend purchaing this product.

The product will most cetainly keep pots from boiling over. However, if you have to do something frivolous....like stir what you're cooking, or take the lid off to serve....it becomes useless. The minute you life the lid condensation and other liquids spill all over.

I use this lid when I am boiling pasta and or frying foods. I also have used it when searing meats to prevent greasy splatter marks.

It works and does what it says. However, on a few occasions I had to really boil certain sauces and gravies really high for certain types of foods and the cover had some minimal trouble maintaining spilling over. But in all fairness I was overseeing the cooking process and was able to lower heat to prevent any serious issues.

I would recommend this product to a friend and find it very helpful when cooking.

No matter how hard I try to pay attention, I always boil over pasta. I spotted this at Williams-Sonoma but was put off by the price. Found it at Amazon for literally 1/3 the price and bought it.

Works like a charm and puts an end to boil overs. Easy to clean. Just be careful, it gets hot and when it's hot it will fall into a large pot pretty easily.

Heavy cast or rolled aluminum is the optimum material for pots and pans. Typical for All-Clad, quality is excellent. This is the perfect size for soups. I also use it in place of the 5 quart stock pot for stove top rice casseroles. The extra volume ensures there's no chance of spills or boil overs. And the thing I didn't expect is how easy it is to clean.

No matter how low I set the temperature, chili and spaghetti sauce always stuck to the bottom of my stockpot, which I always thought of good quality. I would handle it with care to avoid acrid burnt tomato sauce from ruining the meal. No longer a problem! Having cooked a huge pot of chili, I can report a clean bottom on this stockpot with no fear of ruining a family favorite. It cooks so evenly, with no hot spots. I am thrilled with this pot.

Nordic Ware makes a line of 3D pans consisting of a cake mold in two pieces that require frosting to join the two sections. This one is my favorite. I've owned and used it for years and am so pleased with the finished result I just bought one to give as a gift. Included with the pan is a recipe for an orange spice cake that is simply delicious although a pumpkin cake would also, obviously, be a great selection. There are plenty of recipes on the internet for bundt cakes, and cake mixes may be easily adapted for use with bundt cake pans. The alterations usually entail replacing the liquid with yogurt or sour cream (non-fat works fine) and adding an extra egg to make the mix texture heavier similar to a pound cake -so the pan design details pop.

The baking time noted on the enclosed recipe is a guide because individual ovens vary, so check the cake on the early side of the time and then add time as needed until a wooden pick comes out cleanly. It does take a little longer to bake than a normal bundt pan because it doesn't have the open hole in the center which permits heat to circulate. The design of this pan is significantly different than a basic bundt pan, so putting two regular bundt cakes together does not make a pumpkin.

Always spray the pan liberally with a cooking spray that contains flour, like Baker's Joy. Turn the pan over onto paper towels to drain while preparing the batter. Before placing in the oven, give the pan a good rap on the counter to release any air bubbles which can mar an otherwise perfect surface of the finished cake. Each side of the mold should be 2/3 full of batter before baking. Be sure to allow 10-15 minutes (no more) for the cake to cool in the pan on a cooling rack after removing from the oven. Right out of the oven the cake is too fragile to unmold and it will fall apart. After 15 minutes the cake tends to attach itself to the pan so pieces may stick. Place the cooling rack on top of the cake pan and gently invert the cake onto the cooling rack so the cake is supported. Then let the cake finish cooling. If you follow these steps the cake should unmold perfectly every time.

My cakes are rarely perfectly flat, which is a necessity when putting two pieces of a mold together, so before unmolding but after the cake has cooled, take a bread knife and hold it parallel to the pan and trim off any pieces that have risen above the top edge to create a flat surface so the two pieces fit together well.

Decorating can be as simple or complicated as desired. But just frosting between the two pieces to discretely glue them together and then sprinkling with powdered sugar creates a beautiful cake. If using a frosting that will not firm up, cut a thin bamboo skewer an inch or two shorter than the finished cake height and, after frosting the top of the bottom layer, insert it in the center. Then place the upper section over it to add some structural strength.

Do not use metal utensils or harsh scouring pads on the pan and the non-stick coating is not dishwasher safe, so wash by hand. This is a high quality pan and should last a lifetime. The cake is fun to prepare throughout the Fall months, livening up Halloween, Thanksgiving and harvest season while requiring very little effort for a stunning result.

Williams sonoma was first to commission this pan's creation from nordic ware and that's when I got mine. It was also featured on the cover of Country Living magazine 2 years ago and the country went gaga over it! It's an absolutely fabulous pan. I used mine for Thanksgiving and golly, what a centerpiece! Even made rolled fondant for the leaves and stem. However, chocolate fudge works well too for the stem, vanilla tinted green for the leaves. This was very easy to make, it stays together very nicely, and is quite the awe-inspiring dish to take to your Thanksgiving gathering. Before I got it, I thought it would be hard to get it out of the pan in one piece, but it was (okay I HAVE to say this!) a PIECE OF CAKE! If you're into making a jack-o-lantern, you can cut orange jelly candy in the shape of a mouth, eyes, nose, etc. There's also a recipe sheet that comes with the pan. The Williams Sonoma version is glazed a little more prettier and I think it makes the cake pop out easier. I'm thrilled to have it and just bought the loaf pan to go with it! Plus, Nordicware is made here in the USA. Great stuff, highly, highly recommend!

I love this pan -especially to bake the Pumpkin Bundt Cake from Chrysta Wilson's "Kiss My Bundt"Kiss My Bundt: Recipes from the Award-Winning Bakery. Timing is an issue -set the oven for 375 degrees, then turn down to 350 when you put the well-tapped (to remove air bubbles) pan in the oven. Bake for about 35 minutes without opening the oven door, then check every 5 minutes until a cake tester comes out clean. Level the cake -the picture on the Nordic Site is not leveled -either in the pan as one reviewer suggested, or with a cake leveler.Wilton Large Folding Cake Leveler I frosted my first cake with Chrysta's Cream Cheese Frosting to make a "Spooky Pumpkin". Color the frosting orange for a more traditional effect.

I had no sticking issues, but recommend that cooks new to Nordic ware watch the video on their site -coat pan with Crisco using a brush, then spray with Bakers' Secret. After baking, wait 10 minutes before inverting the pan, then wait ten until you unmold it.

The pan worked great overall. It took a little longer to bake than with a normal bundt pan. The cake came out cleanly and easily. I wasn't able to get a smooth connection between the top and bottom without losing too much cake, but I think that could be fixed by using a little extra cake batter.

So far, so good. I have had this cutting boards for several months. I like the concept of bamboo (great durability & no trees have to be harvested). I have owned other types of wood cutting boards in this price range and experienced cracking or warping after initial use. Nothing so far with this cutting board. It is much heavier than I anticipated. Even thought it is heavy, it is thin enough to store easily. I have bigger, heavier cutting boards but this one has become the one I reach for first. Cleans up great. Works great!

Been using PVC plastic boards, upgraded to this bamboo board so hot stuff doesn't burn the board when it's just off the stove.

Holds up great even with super sharp Shun Blades. Very easy to clean.

It is kinda heavy, good part is it won't move around when you are working on it. Bad part is you can't just pickup the board with 1 hand to clean the bottom.

Minor issue:

Keep the bottom dry, otherwise it'll make a wet wood smell. Kinda nasty. If it happens, stand it against the window and let it dry under the sun. It'll get rid of the smell.

Update: After about a year, even with oiling, I did get some cracks. However, I repaired them with Titebond III and that has solved the problem. I suspect this will last for years now.

Not sure about the claims of hardness but this looks good, is well designed, and after a few months appears that it will last a long time. Be sure to apply mineral oil or it could split.

After a few months one of the 'raw bamboo' end pieces warped and started to separate from the 'steamed bamboo' body. Now it wobbles on the counter unless I put a towel under it. The grooved edge seemed like it would be convenient but all it seems to do is make the board harder to wipe clean. On the plus side, the surface has held up very well. I will probably replace it with a flat, solid bamboo board.

My 17 month old toddler has used these on and off for about a month. They are a great size and easy for her to hold. The fork is just prong-y enough to stab pasta without being too sharp for learning purposes. However, about 25-40% of the time, she picks up her utensils with her left hand. The curve on the heads of these are specifically set for right-handed use. (Ok, it's adorable and somewhat hilarious to watch her try to use her left hand to scoop yogurt into her mouth with this spoon... but still... frustrating for her!) The plastic is firm and not adjustable. When she gets better at using utensils, I think these will be fine, but while she's still fiddling around and learning they're not ideal.

Carrying case (which is handy for all sorts of things, including take-and-toss silverware)

Dishwasher safe

Usable but not-scary fork!

Really only good for right-handed use

When I was a kid, we had Paul Revere pots and pans. I think my Mom still uses the same ones to this day. Once I took off on my own, I'd bought any number of different pots and pans none stood the test of time. From those brown clear glass things to a T-Fal pan that shed it's non-stick coating (yech!), they've all come and gone. It wasn't until last year that I asked for a full set of decent pots and pans. And what did I get but old faithful Revere Stainless steel set with tri-ply bottom. Sure, these aren't as sexy as some new non-stick thing you saw on TV, and they aren't endorsed by some wide-mouthed tv chef, but they'll last you a long time and clean up well. The pots are my favorite thing. Sturdy I've used them a ton, banged them around, cleaned them a million times and they still hold up. Sure, food can stick to them, but just use some elbow grease and the occasional SOS steel wool sponge and they're as good as new! I love them. I plan on using them for as long as they last which will be a very long time!!!!

One sentence: If you buy nothing else for your kitchen, buy Revere pots. They last a LIFETIME, are easy to clean, and fabulous. ...Okay, so that was two sentences! :D

I absolutely love Revereware. My mother used it and I still have a pan and skillet from her which are still in use. My son has the rest of her set so we are a three generation Revereware family!!!

I've been looking for a griddle/grill pan, but I have a ceramic top stove, so regular cast iron is a no-no. But after lots of searching, I found that enamel coated cast iron is okay to use, and had high remarks. I honed down my search, and found this Cuisenart grill pan to have all the attributes of the higher priced ones, and Amazon had the best price.....so I ordered it.

I got it 2 weeks ago, and it's quickly become my favorite pan. It grills burgers, fish & chicken beautifully. Even has a pour spout for excess grease (which drains away from the food, a big plus in the health department!).

With all the rain we've had, I haven't missed the outside grill at all. And it makes the best panini's, so you won't need another expensive thingy in your kitchen. Get your sandwich loaded up, put it onto this pan, and weigh it down with something (I use a bacon press, but you could use another heavy bottomed pan instead). Flip it once, and you'll end up with a wonderful crusty sandwich....evenly melted & amazing!

Tip: Preheat before using, but don't use this pan "dry". I pre-spray with Pam before heating, and spread butter or oil on the food I'm cooking.

This pan can go from oven top to broiler to oven. Great to sear meat. Smaller size for those who cook for 1-2 people. Easy to clean and good looking.

Before using the grill I called Cuisinart to get their input on the best way to clean it. When I got through to Customer Service I was advised that they had no record of ever selling an enameled cast iron grill with the model number I provided?

I pointed out to them that I was looking at the Cuisinart website as we spoke, and the grill was listed on their website with a photo, model number, and price. I was advised they still could not find it either on their website, or in their computer. They provided me with another number to call that would be better able to address my questions.

When I called the number provided I was informed that they had referred me to a privately owned retail outlet, but that they would try to help me. I was finally advised that according to their records Cuisinart had never offer an enameled cast iron grill for sale?

As a last resort I sent an email to the Cuisinart Marketing Department that included the above info.

I was contacted the next day by two different people from Cuisinart who apoligized for the mix-up, and offered the following info concerning the care and cleaning of the grill:

"The interior is Porcelain enameled and it is dishwasher safe; as far as cleaning, it should be cleaned after every use and there is no need to oil it or season it. Food should clean easily because of the enameled surface unless it is so burned into the surface that it may take a lot of soaking to remove the residue".

So far I have used the grill four times, and it grills steaks and lamb chops just great. After each use I moved the grill off of the burner and added a little hot water to let it cool down and soak (I have a ceramic glass top electric range).

After the first soak I scrubbed the grill with a nylon kitchen brush with hot soapy water, then let it soak some more in hot water and dishwash soap.

After the next scrub the grill was pretty well cleaned. Then I ran it through my dishwashing machine and it came out very clean. It took a little extra effort to get it clean, but it was still a lot easier than cleaning my tabletop electric grill that has three large pieces to clean, and is a lot larger to work with in the sink.

I am very happy with the grill, and would buy it again if the one I have ever needed to be replaced (which I doubt will ever happen in my life time).

UPDATE:

OK, I have used this grill several times now, and am now having some issues with it. I set my ceramic glass top range at medium (5), and let it heat up for a few minutes before I start grilling. It seems that the more I use it, the harder it is to clean...even after overnight soaking in soapy water. Today I found that there is some blackened areas that just won't come clean. I tried Stove-top Easy Off, and that helped a little. The dish washing machine no longer gets it fully clean either. Also, today I noticed a small rust spot on the inside front side of the grill where it looks like some of the gray enameled chipped off? I only use a nylon brush to clean the grill, and tongs to put the meat in and take it out. So have no idea where that came from?

First off: false advertising on the list price. Cuisnart's website lists it at $39.95.

Enameled exterior is better than a plain cast iron exterior. It slides noticeably easier on the stove top. I'm not sure what good the enameled interior does. Things still stick to it like other cast iron pans that I've used. I haven't found any good way to season or grease it before cooking that actually makes it easy to clean. The pour spout doesn't work all that well. To not have it run over the sides, you have to pour very slowly which is difficult given the weight of the pan. Bottom line, it's a pretty grill pan but just average performance.

This 9-1/4" grill pan is fantastic. Not only does it fit well on your average cook top, it gets HOT (as it should) unlike other larger and heavier cast iron grill pans that need more BTU's than your average cook top can produce. Plus, it has an enameled finish available in different colors.

this is really great to help store all kinds of things. I have one for my baking pans and one for my lids for my skillets and pots, including glass dishes that i bake in. I even have some cookbooks stored in there to keep them handy.

For 7 bucks you can't go wrong with this organizer. It holds a lot. At the moment it's holding three frying pans, seven baking pans, a crape pan, two pizza pans and three glass lids. I'm buying another to hold my deeper cake and cupcake pans. The slots are different widths, which is very helpful. Be sure to wash it when it arrives mine had some light dust on it. No assembly required, it comes in one piece. This is a inexpensive solution for a messy little problem, pan and lid storage

I purchased this item because I wanted 6 slots to hold frying pans. Here is what I found upon receiving it. The slots graduate from smaller to larger as follows: 1 1/2", 1 1/2", 1 5/8", 1 3/4", 2", 2 1/4". Overall it is 12" long. I do like that it's coated, but I found that I could not use the 3 smallest slots for frying pans. It does work well for baking sheets and tupperware lids.

I have an open shelving system for my pots and pans, so I was not at all concerned about them fitting in a cabinet persay. But these are the FIRST racks that I bought that allow my large and small lids to fit without falling over. My only complaint is that I wish they came in a different color, but since I got them for half the price of a footlong sandwich, I can't complain since I see the price has since went up. I plan to just spray paint them black or stainless look. But... even with the price increase they are completely worth it if you have large pot lids and need a thicker sturdier rack to hold them in as most that I have seen in the stores are a more flimsy wire. I also want to note they have a soft coating on them which will help prevent scratching.

I highly recommend these!!!

i only have one issue with it, the wire separators are a bit too tall for smaller lids. They dont sit down in it all the way.

Daughter in law loved it, but I thought it was a bit to small for the price. At any rate it was new and packaged well I received it in time for their 6th Anniversary so they were both happy with it.

These microwave pans are very useful for cooking in my microwave. I use them all of the time. The handle just snap right in place. They are a good size for small and large microwaves.

These microwave pans work great! Got them last night and have already used them a few times. We made burgers in the grill pan, it holds 2 good size burgers and cooked them to perfection! I also made quesadillas in the grill pan and they also came out great! We used the 1.5 quart pan for for zucchini casserole and it was just as amazing as if we had cooked it in the oven for the 1 hour the original recipe states and only took 8 minutes! I also made some nice, juicy and tender chicken breasts from frozen breasts and some lemon and seasoning. We have 5 people in our family, hence all the different items cook in such a short time. This item says it comes with a DVD instructional but I did not receive one. They both did come with a mini cookbook. It is best to read through them to get an idea of time frames, but each microwave is different. Should you buy this? Yes, if you want nutritious food fast without a lot of clean up these are fantastic. The grill is best for 1 or 2 people portion size wise. The 1.5 quart size is good for 2-4 portion size wise in one micro-go-round.

I haven't had much luck cooking with this set. I've tried to adjust times and power but for some reason everything burns or is under cooked even though I use cooking spray. I've given up and found something else to cook with in the microwave which I've had great success with. It's too late to send this set back so I spent a lot of money for nothing and that's not a good thing.

It's probably me using it wrong. I tried to make cupcakes and it burned the paper liners and didn't cook the cake mix. Then I used the grill bit and that didn't turn out well at all. I'm not giving up, I'll try some other stuff and see if I can get a satisfactory result and maybe repost.
