I was looking for a heavy pot to cook my marinara sauce in one that wouldn't scorch so easily on the bottom. I make a huge pot of marinara sauce twice a month and I was tired of scorching the bottom and trying to salvage unburnt sauce into another pot, which really never works because the scorched taste is still there. Maybe I am not attentive enough, but this happens regularly with all my other pots, Calphalon, Cuisinart, Farberware, etc. I can't use my Lodge cast iron because it is not big enough for the amount of sauce I want to make. Since All-Clad is so expensive, I decided to try Cuisinox. OMG! I love it! It is heavy, heavy, heavy really substantial and my sauce doesn't burn. Mind you, you cannot walk away for 20 minutes while the sauce boils, but with a reasonable amount of attention, this pot gets the job done. I then purchased a Cuisinox Elite 7.8 Quart Covered Dutch Oven, and this weekend, I cooked beef burgundy in it to perfection! Cuisinox is a Canadian company and they explained that their Elite line is thick 3-ply stainless steel on the bottom AND the sides of each pot, whereas their Gourmet line is only 3-ply on the bottom. So, stick with the Elite line and you will a heavy stainless still pot that rivals any other top of the line cookware.
