I love this griddle! The encapsulated/ribbed bottom heats evenly and nothing sticks! I have always had trouble with bacon sticking and tearing in other griddles, but not this one. It also works great for cooking burgers. I can cook at low temperatures to prevent over-browning, and yet it still cooks quickly and thoroughly. It is easy to clean and if there are any grease marks left over, I simply add a little distilled vinegar to the wash water. I don't mind that the encapsulated bottom (in the shape of a circle) doesn't go end to end, it covers plenty of space and doesn't have any ill-effects on your cooking or the outcome of it. My only regret is that I didn't find this griddle earlier.

I was actually looking for a SS pancake griddle, I ordered this thinking that's what it was. After receiving it, good quality, I decided not to send it back. We've used it more than a few times, this time of year, grilling outside is a little chilly. It's a well made piece of cookware. Still looking for that SS Pancake Griddle though.....
