First I have to say that I love cheese and I purchase a lot some very expensive. I have tried various cheese "keepers" for storing cheese, tried many types of wraps and packages and except for my "antique" glass cheese keeper that requires the use of diluted vinegar in the bottom, I have not been happy with any.
I came across this product a while back, in the catalog of a cheese retailer, and ordered a package to try because I hate losing even a small amount of an expensive cheese.
It works! I used it to wrap some cheeses that are notorious for rapid hardening and/or molding (undesirable mold) and I was very pleased to find that this product works better, with less mess and less waste than anything else I have tried.
I'm ordering more, so I won't run out and also have sent some to my daughter, also a fan of cheese.

I love cheese.I mean I really love cheese... specifically your clothbound cheddars and your wensleydales.
The worst thing is to go to Whole Foods, take your time picking out a $20+ cheese only to go home and have them harden, deteriorate in texture and taste the very next day because of the whole foods butcher paper.
Cheese paper works. My Jasper Hill Cabot Clothbound Cheddar stays frim and craggly, just like it was meant to.
My only minor complaint is that now that I label my cheese, I can see how much cheese I eat and how quickly...it aint pretty folks.

I am so pleased with this item. I am a big cheese lover and this really does solve the storage problem associated with cheese. It keeps the cheese fresh and flavorful. The sheets can be easily adjusted to the size of your cheese, so you can use one sheet for more than one block. In doing so, the sheets last a long time and you get a lot for your money. Before I bought this cheese paper I would do the cheese search in the refrigerator. After buying cheeses, opening them, and then rewrapping them in heaven knows what--namely plastic wrap, aluminum foil, plastic containers, it was always the same result, moldy cheese. Not only that, but unless it was an identifiable cheese, like Brie, I didn't know what I had wrapped because the label was no longer there. This paper is similar to what Kerrygold cheese is wrapped in--it's a lightweight paper lined with a porous type of plastic. The box contains the paper in sheets plus some stickers that you can write on with the name of the cheese and the date it was wrapped or even sell by date. There are also pictures of a sheep, cow, and goat so the source can be identified by circling or checking one of them! What I also like is that the cheeses can be rewrapped after use and amazingly the stickers still stick! The paper can also be cut to size to wrap smaller cheeses. So far I have noted that the cheeses have stayed fresh with not a trace of mold. I found this product advertised in Cooks Illustrated and was delighted that I could order it here on Amazon! I highly recommend this product to all cheese lovers!Just a note: I've also discovered that deli meats keep very well in this paper as well.
