This is a beautiful pan; the cakes are gorgeous plain or dipped in a little ganache. I love the thick aluminum. It holds heat well and the light color seems to help prevent overbrowning. For my first batch, I used a rich yellow cake batter. I brushed the pan with a Crisco and filled each shell about 70%. I received this tea cake pan as a Christmas present and tried it with my favorite bundt cake recipe. It works beautifully! I oiled/floured (pam with flour is fine) and filled each section only half full. My first batch came out fine, but it was obvious that 3/4 full was too full. You want your cake mix to rise just to the top of the mold and not over to make the prettiest cakes. I found that baking the cakes for about 13 minutes was just right. Powdered sugar on the tops of the cakes brought out the designs and made my little tea cakes look quite elegant.I think this pan turns out beautiful bite-sized cakes, that would be lovely to take to a potluck, an at-home tea, or a bake sale, or for just an alternative to cookies at home. The pan makes 30 cakes in varying shapes (flowers, bundt, stars, hearts, etc) and I filled the pan nearly 3 times before using all the batter.
I'm sure that this will also make a wonderful chocolate mold as well, and I plan to try that too, (maybe for valentines day), but until then, I have a few more recipes to try in it and a group of hungry co-workers to impress.....
If you already make large bundts, or have the individual sizes, this would make a welcome addition for that "just a bite" size that is sometimes just perfect!

No fuss, no muss, but a few tips will help your success in working with this pan:Greasing the pan tip--no need to use a spray--set this pan on a cookie sheet. Using a 3 or 5cc syringe (no needle) add 1/2 ( .5 ) cc of olive oil to each shell if there is also some oil in the batter. If there is little or no oil in the batter, increase olive oil up to 1cc per shell. Put the cookie sheet with the shell pan in a 350 degree oven for a couple minutes until the pan is hot. When the pan is hot, remove the cookie sheet and pan from the oven and fill shells with batter. Put back in oven and bake. This method works with full size bundt pans too (use more olive oil--not all oils work, so you may not want to substitute.) Perfect, easy, no stick results.
The cavities are small, so filling each one with batter to the desired level can be tricky. A catsup or mustard bottle or perhaps a honey bear bottle with the point cut off will allow more control. I tried using a Tupperware 2 cup measuring cup--it did the job, but not without me making a few bloopers.
I avoid using metal utensils on my Nordicware. I have found that the corner edge of my silicone spatula is a perfect tool for tipping up a small cake to check for color. A toothpick can be used to see if the cake is done, but sometimes I want the finished cake/bread a bit darker, sometimes not. The silicone spatula allows me to check without scratching the pan or damaging the cake/bread.
I am still working on the perfect baked hush puppies recipe. The first trial produced perfect little shells, but the recipe needs more tweaking. I am trying to recreate the flavor of the Hush puppies served at Foss Brothers fish restaurant in Norfolk, Va. I don't think the restaurant exists any longer. How I wish I had their recipe!

This was purchased as a Mother's Day gift; however, Nordic Ware always has their Brand Name Boxes that which I always use them for storage when not in use due their unique features. Thus, making storage of such elite Baking Ware safe and easy to find and within reach. I was slightly surprised when this item was shipped was only in a plastic covering so I am left scratching my head knowing my daughter in law loves my Nordic Ware items and has used them, washing them, drying them and putting them back into the boxes where they are stored in.I am left in a dilemma as why this was shipped just with a sleeve covering marked Nordic Ware .... I would have given this a 1 star but just didn't have the heart to do it.
THERE IS ABSOLUTELY NOTHING WRONG WITH THE NORDIC WARE PLATINUM COLLECTION SEA SHELL PAN AT ALL! It is just lacking the Nordic Ware box!
This Nordic Ware Platinum Sea Shell should be named "Beach Front" because there are more than just seashells:
