Ok, I bought this pan but was taken aback at the apparent easy removal of the rust coating. With pan's coating so easy to come off, I was concerned that this was a hazard, and I was ready to return it. However, I did a bit of research, and I found this the following on "Before the first use, you'll need to wash it well to remove the manufacturer's special anti-rust coating. You can do this with hot soapy water. "
It would really help if the manufacture included Before Use Cleaning instructions.

This pan is pretty good. We are very pleased. The only surprise I found was how quickly it heated up, but you can quickly adapt. Also, it shows how efficient is the design. By the way, it does more than paella.Best Deals for Paderno World Cuisine 13.325 Inch Polished Carbon Steel Paella Pan
Arrived fast and as it was described. The film though was a little tough to remove, which I had to soak to losen.
