I bought the Mauviel M'steel Frying Pan in the 8 inch and 9.5 inch this Christmas to replace some Calphalon Non Stick pans that were wearing out. Real Simple magazine had a review on this brand and indicated they were a great buy/great find.

They arrived very well packed, and had a layer of wax on them to protect them as well. It was a bit daunting to get the wax off, and took a bit of time to cure them--we did the process (peanut oil and high heat) two times, and then were very careful when cooking with them for a few times after.

The effort was well worth it! The pans are the perfect sizes for just an egg (8 inch) or eggs or an omelette or potatoes (9.5 inch) and they are completely non stick now. The handle feels substantial and very comfortable (I have small hands, my honey has big hands and we both like the handle equally). My honey says that eggs taste better in these pans than any pan he has cooked with in many years--and he is a wonderful cook with lots of experience!

We do not use soap, and we wash out the pans by hand, dry them and hang from our pot rack in the kitchen which protects them from bumping into other pots and pans.

We have used the pans almost every day since Christmas--10 to 12 times each at least.

I really like the way they look too. Very utilitarian looking, they make a statement about how serious we are about cooking and preparing tasty meals. The old adage "use the right tool for the right job" applies here--these are definitely the right tools for this "cook a lot couple"!

We are extremely happy with these pans, and expect that they will serve us well for many years to come.

UPDATE: It has now been several months and if it is possible to be even happier with these pans, well we are! Food just slides off them, nothing ever sticks, it's a breeze to cook anything and everything tastes better cooked in them--I don't understand how that can be, but it is! We cooked a cheese quesadilla recently with a little olive oil--wow--it browned up each side of the tortilla beautifully--melted the cheese perfectly--so the food was visually attractive and tasted great! We occasionally add more oil to the bottom of it, turn on the burner briefly, and then wipe it out. The pans have developed a beautiful patina--handles are still sturdy and I expect these pans to last a good long time.

I didn't buy this product from Amazon, but from another seller. However, I did feel compelled to review it here. Contrary to the other review, the process for seasoning this pan was quite simple. The key is to follow the directions on the card that is attached to the pan. The pan is coated with beeswax, so it must be removed. Beeswax melts at about 145 degrees so if your tap does not allow the water to get that high, it is best to do what I did: boil some water on the stove, drain it into your stopped kitchen sink, let it soak for about 5 min, pull it out, and wipe it off. Be careful though because the pan will be boiling hot. After that, put peanut oil in the pan, wipe it on the sides a little, heat it to about 400 degrees, let it cool, wipe it out with a paper towel. Repeat the oiling, heating, cooling, and wiping one more time, and then the pan is ready to go.

As I said above, this pan gets hot quickly. It's made of carbon steel like a wok, and is designed to get hot quickly for great sears. This pan has performed beyond my expectations when I have used it, and it keeps getting better non-stick properties as I have used it; just like an iron skillet does. I can understand why some restaurants use these pans. They are really good.

Simple elegance, functional, it just works. I use it for creeps, omelette, fish (not at the same time). Cleaning is simple just rinse with water or heat slightly and wipe clean with a paper towel. Looks like a very old piece in a matter of weeks, really cool patina.

This is my first purchase of cookware that's required seasoning. I've always found it intimidating, but I'm glad I went for it. On a side note, I've not had the pan for very long and I usually cook with a small bit of oil or butter depending, however fried eggs have been a breeze and I imagine fish or anything else will not stick to the pan either. I believe the non-stick performance will even improve as it continues to darken. Seasoning was really easy, but removing the beeswax coating was a bit of a pain. I'm so happy with my purchase as I can see this beautiful pan lasting a lifetime if cared for properly (no soap/detergent when cleaning and important to dry it well). I'm already considering buying more from Mauviel. The pan is packaged in a beautiful brown bag and it's really like a piece of art it's so well crafted.

I had a hard time seasoning it but it is such a good pan. Now it is nonstick. Cleans very easily.
