Expensive? Yes. Worth every dollar? Yes! The difference in making a sauce in this PORCELAIN insert double boiler and just a metal one is incredible. The keys are that the insert is not in the water and that it is made of heavy porcelain which is gentle on the sauce. No more mediocre bearnaise in this house! An added bonus is that it looks great.

I agree with the other reviewer: expensive but good.I have made bernaise sause with ease as well as chocolate mousse using this pan.
One thing I think you will like is that the ceramic insert is easy to clean, even with melted chocolate on it.

Well, unfortunately I bought this beautiful EXPENSIVE double boiler. After 3 or 4 years time the handle leaks copious amounts of water out of the bracket holes. I am now told that's part of normal wear and tear and MY problem. At first they told me to mail it to France to have it fixed (from California!) LOL. They told me it needs to be retinned every few years too and that's why mine is leaking. I am very angry. Nobody told me this when I bought it. It also came with cancer warnings because of the handles. I will NEVER again buy any Mauviel product.
