I have this pan worked great for about 1.5 years but then began to "bubble" on the flat surface. Obviously this is a manufacturing issue & Scanpan claims to have a lifetime warranty on manufacturer defects. I sent it off to the factory & they refuse the claim due to lack of cleaning...
I work in a freaking research & development department for cookware. I know how to clean a fry pan. Their "claim" is a small area on the lip of the pan FAR AWAY from the main bubbling issue & an area I didn't scrub completely because once I noticed the bubbling, the pan is useless to me.
This is a complete joke & their warranty "policy" is apparently: unless if falls out of the manufacturer's box in 10 pieces all while catching it on camera with a factory representative on hand, we will not cover.
Roll the dice if you choose. This pan is so expensive, for them not to treat warranty claims with the respect they deserve is ridiculous.

I've owned several Scanpan products. This fry pan, an 8-inch fry pan and a sauce pan. All stick after being used for a while. After I had problems with the first one I talked to the store I bought it from and to Scanpan. They said to use lower heat and don't use cooking sprays. I followed those instructions with the next pan I bought and still had problems. I also tried the "restore" method mentioned in the manual using the steel wool that was included with the pan without any success.When they were new they were great, but once they started sticking, they were worse than a regular pan without a non-stick coating. Plus the sellers won't back them up. I tried to return mine under their "Lifetime" warranty, none of the stores selling them would take them back without talking to the distributor first. The distributor never returned my phone calls. Also a major consumer testing magazine that originally gave these a high rating retracted that rating after getting bad feedback from owners. You can read back issues in your library.

I just got one. I tried cooking an egg with no oil in it on medium heat. It stuck a little, but I could clean it off with one wipe of a paper towel. I can't do this with any other pan I own. With just a slight amount of butter (a pat cut 1/16th inch thick), I repeated the test and was able to flip the egg with ease and there was NO stcking at all. It cleaned off with just dabbing a paper towel along the surface. The outside of the pan also has non stick sides, so if you get some slop on the sides on the outside of the pan, it wipes off as well. The heat distribution was superb as evidenced by the changing pattern from clear to white of the egg white and the uniformity of browning of the egg surface. I intend to use this pan for omlettes and crepes. It exceeds any other fry / saute pan I've used.
You can use metal utensils on this pan: amazing. The handle is suppossed to be good to 500 deg F. I finally found a non stick pan I can use!
I have Le Creuset, multiple stainless, plain cast iron and several (retired) non stick (including Corning and Analon). The eggs are cleaner than from cast iron. In the Le Cruset or stainless, a soaking is required for the same test.

I was very excited the first time we got our Scanpans. I read about the new technology surrounding this product that supposedly to be non-stick for many years. Now, we only have the big sauce pan left. We have to throw away the 2 frying pans.
To give it some credit, they lasted a couple of years before it started to peel off (actually not peeling off like a teflon. It starts to have some tiny holes on the surface which grows in size as you use it. Then finally when we see the metal base, we got worried that pieces of those non-stick surface gets to our food that we decided it's time to get rid of it). The non-stick properties starts to wear off before it lasted a year.
Pros:
-heavy and thick to distribute heat evenly
-Handles are oven resistant so you can actually use it to cook in the oven
-Well made, great construction. Durable.
Cons:
-Not as non-stick as teflon. And non-stick properties continue to deteriorates as you use it. Approximately a year.
-Not a good value. For the price, it should last much longer.
-Not for induction cooking.
