I am pleasantly surprised that it has not blackened like all other mats do and that the quality has remained the same since I bought it (probably used them about 30 times in the oven since). I also use it for rolling out dough and fondant Not an ideal surface, because it gets sticky, but at least it's cleaner than using my kitchen countertop. I have yet to try it with chocolate and candy making, but I'll update once I have.
3 Month update: Still awesome, I use these about twice a week. The only thing that's stained has been a tomato-oil sauce. I have now tried the mats w candy making (ie, pipe melted chocolate on it, and throw it in the fridge or freezer), and it worked really well. Only problem is if you're gonna roll up the mat to make a curved 3D piece, note the candy/chocolate will stick to both sides and you'll need parchment paper on one side. Alternatively, potentially try corn starch to avoid sticking? I have yet to try this technique.

I have always hated greasing the pans, when baking, so, about five years ago, I purchased made in France, silicone baking sheets, from Amazon. This year, I decided that I needed two more sheets, but when I looked for them, the price had increased by almost double per sheet! Well, I kept looking and I found these wonderful sheets that are made in the U.S.A. They work just as well as the imported ones. Cookies never stick, and cleanup is so easy! I was wary of buying these because they look thin in the photo and I know my mother paid four times this price for two regular sized silicone mats. However they're very high quality and they work well. Having known about silicone bake ware for years, but having never used it, I was skeptical about how well it would work as a non-stick material and as a way to reduce the long term wear and tear on baking sheets (lots of scrapping and scrubbing can be torturous on metal baking sheets after a couple years of use). I have purchased many non-stick baking sheets over the years, and have been extremely unhappy with them. None of them are really all that non-stick and the non-stick coating has always started flaking off after a year or two of use.After using these a couple times, all I can say is wow, I am sold on silicone bake ware.
The non-stick-ability of these silicone mats is top notch. The first thing I cooked with them is a homemade pizza. The pizza and any misplaced toppings (such as cheese, which usually bakes on as a brown/black cement when it touches a metal pan) did not stick to the silicone at all. The pizza literally slid around on the mat a little as I was taking it out of the oven. I was thoroughly impressed with how well it worked.
There was a slight chemical smell the first time I used the mats. I expected this. It did not affect the smell or the flavor of the food that cooked on it and was not over powering. If you are worried about this affecting your food, I would bake the mat by itself in the oven for like half an hour to an hour.
This product can hold on to grease a bit. I baked bacon on one of the mats, and mat felt slightly greasy/oily until after a couple more baking/handwash cycles. I almost consider this a bonus as bacon is awesome, and I would like to think that the greasy feeling flavored foods cooked on it flavored them with bacon. Sadly, I did not notice that all of my food tasted like bacon (0/5 stars, all food cooked on these mats does not taste like bacon :-P).
The product description does not give a temperature rating, but if you contact the manufacturer, they will say 480F. As far as I can tell, this is the standard maximum temperature for silicone bake ware.
I bought the baking mat set with 2 baking sheets Nordic Ware Bakers Half Sheet, 13 by 18 by 1 Inch. The mat nearly fits the pan perfectly, and as best as I could expect it to, with the products coming from different manufacturers. The mat is probably a couple millimeters longer than perfect and probably a half a centimeter too narrow from perfect.
Overall, I am extremely satisfied with my purchase and would recommend these to anyone seeking a better baking experience.
