I love All-Clad and had wanted a double boiler set with a ceramic (not stainless) insert. This arrived quickly and in pristine condition ... carefully packaged, complete with a cloth cover for the pan. I've used it once to make custard. Turned out great BUT I realize the ceramic insert does such a good job of keeping the heat down, that it took me longer to make than I'm used to (took longer to thicken as ceramic doesn't get as hot as steel).

Having said that, this is a great buy and I'm so glad I found it. Will do wonders for ensuring I don't ruin sauces by overheating.

Love it. Well worth the purchase.

Pro: high quality and manufactured in USA. Very happy with performance of porcelain boiler; little water loss during double boiling at med-high temp.

Con: Expensive; no water-level mark on sauce pan for double boiler use but 3 cups of water is just right.

I had another double boiler before this, but got an induction cooktop and that one was incompatible. This is excellent quality. It actually takes longer to cook the custard I think because the thick porcelain is providing such protection.

I've been wanting a double boiler for quite some time and finally took the plungeI'm not disappointed. The piece is in beautiful condition and came carefully packaged. The wall of the stainless steel base and the porcelain insert are both very thickeven the lid is heavy! The handles are solid and riveted to the body of the panvery solid construction.

I was hemming and hawing over the price ($180 for the porcelain double boiler vs. $50 for an average stainless steel double boiler) but I'm really glad I invested in the porcelain. I use it mostly for ganache bases and custards. It does take a lot longer to melt chocolate in this than a regular pan or even a glass bowl set in boiling water (which is what I used to do) but it's gentler and gives you better results. The risk of over heating and curdling custard is also lower because everything is slowed down a bit thanks to the insulation value of the porcelain.

Even though this is a great product and cheaper than the $255 Williams-Sonoma advertises for the same product, consider the use value carefully. If you're only needing a double boiler once or twice a year, you may be better off sticking to the old "glass-bowl-in-a-pan-of-boiling-water" method.
