This was my first time using these pans. I ordered a small one (1O inch carbon steel) and a larger one (14 inch black steel) that was also from World Cousine. The 10 inch carbon steel one weights more than the 14 inch one. The 10 inch carbon steel is just a lot thicher and sturdier. I have to believe it will do a much better job at even heat disipation as well. For durability, and even cooking I would reccomend the carbon steel over black steel any day. If you look at the descriptions specifically at the prduct weight, you should get a good indication of how heavy duty the pan is. Keep in mind, these are steel, so you will need to season them (the more the better).
