After about 8 months of use per instructions, the skillet has lost all nonstick qualities. It was very slick for the first several months but now we use it like an uncoated triply and as such, is one of the best. Quality construction, very even heat and perfectly flat, now it just sticks like crazy without lots of oil. It has never been in a dishwasher, overheated or seen a metal utensil. No visible scratches. Any ideas on restoring nonstick?

I have owned these pans for about 6 months. When I first got them they were very non stick. Wonderful. But as the months progressed the non stick started to degrade to the point where now it is hardly non stick anymore. I have NEVER used them dry. Only with a good oil or butter. I keep the heat on medium to low. In addition they chip very easily. Now before you blame me, I have never used anything but plastic or wood utensils and never stack them with other pots. But regardless they now have several small chips on the rim and in the middle of the pan. I am truly mystified as how it happened. But if it was my fault then they are super fragile as I am a very careful cook and have always treated them with great care. I am really bummed by this as I love the feel, weight and look of these pans. To return them to Zwilling from Hawaii is a very expensive undertaking and I am not sure if the manufacturer will replace them even if I do. I wish they lived up to the promise and I wish I could leave a 5 star review. I want to love these pans but they have failed in a very short time of using them only 2-3 times a week. Worked great for four weeks and then food gradually began to stick to the point where the pans were unusable. Since they are guaranteed for life I contacted Henckel's customer service for replacements. I sent them back as requested and they determined the pans were "defective" and shipped replacement pans which I have received. It will be interesting to see if these perform any better......According to many of the reviews above I am not the only one to have this issue. I suggest contacting their customer service at:

I bought the Zwilling J.A. Henckels pans to replace two Cuisinart ceramic non-stick pans of the same size. The Cuisinarts never lived up to their promise of a non-stick surface unless the pans were really well heated first and then coated with oil spread by a paper towel. And, as the Cuisinarts aged, their surface lost most of its non-stick properties.I've had the Henckels for about a week, so I haven't had them for very long. Out of the box, the light blue ceramic coating is pretty. These pans heat up much faster and appear to heat more evenly than the Cuisinarts. My first test was chicken cutlets. Using very little oil, the chicken browned nicely without burning. By applying a little motion to the pan, the pieces of chicken slid easily in the pan. My ultimate test was two sunny side up fried eggs. I put a few drops of oil in the pan and spread it with a paper towel to coat the pan. Eggs went in and then, as the eggs started to cook, I added a tablespoon of water and covered the pan. In other pans, the addition of the water will cause the egg to stick. Not in the Henckels. I used a fork to gently release the edges of the cooked egg. The egg then slid out with a problem and without breaking the yolks.
I've been using them about once a day and have yet to have a problem with sticking. If there is some residue left in the pan (could be caramelized juices, cooked breading, etc.), it is easily removed without scrubbing.
I think that one trick is to coat the pan with a little oil spread with a paper towel. That should allow food to be released easily.
After reading some of the other reviews, I wonder if the non-stick surface will last the longer I use the pans. If that should happen, I'll update my review.

I cook a lot and I don't like to wash dishes.To me, a great pan conducts heat evenly, can go through the dishwasher and comes out looking like new forever.
I use gas and the heat conductivity is such that I have to be careful, so watch your stuff, it will burn if you use the settings you used on your old pans.
I bought the 8, 10 and 12 inch size., Made crepes in the 8 inch pan yesterday, latkes in the 12 inch pan the other day and I brown thick rib eye steaks on top of the stove and finish them in the oven at 425 for a few minutes. They work like a charm.
