I bought this from Amazon because it appeared to be the best deal I could find on a double-boiler. I wanted to make my own Hollandaise sauce, among a few other things. The good news is that I made a pretty tasty Hollandaise sauce on my second try; so we know this thing can do its job adequately.The issue is that this may be one of the worst possible designs for a double-boiler, making it less efficient for thicker sauces and other sticky-type stuff. You may not see this in the product product photo, but there is a ring around the upper pan, roughly one-and-three-eighths inches from the bottom of it, that was "stamped" into the pan so that it fits snuggly into the bottom pan (the overall inner-depth of the top pan is roughly 3.5 inches). The problem is that the ring gets a bunch of stuff stuck into it on the inside, and the only way to avoid this is have less than 1 3/8 of liquid in the pan, and of course mixing or whisking would put any amount of liquid into the ring. When working with a small amount of precious liquid/sauce, it is terribly frustrating to see so much get stuck in that ring. If you are already stuck with this unit, I suggest purchasing a $4 GLASS baster to remove small amounts of precious liquids without having to try to pour over the ring, which is invariably messy.
Second flaw: the lid handle is poorly designed and installed. First, it gets super-hot and you have to use an oven mitt with it to avoid being burned. Second, when cleaning this after my very first use, the entire metal piece that contacts the glass (not the roundish handle, but the large finishing-washer type piece underneath the handle) was filled with water (from the steam that rose when warming up the bottom pan), and you cannot get this water out without getting a phillips screwdriver and removing the lid.
The instructions claim that it is safe to use a metal whisk in this pan, but I would discourage anyone from doing so because this unit scratches very easily. Get yourself a good quality non-metal whisk to use with this unit.
This is the only brand new pan I have bought that is clearly not completely symmetrical. For example, the handles have a little indention where a person's thumb would normally go, and neither of them are perfectly centered on the handle. The handles are not completely square to the pans either.
I'd say this product would be a fair deal for $20 and free shipping, and anything more is a rip-off. I recommend saving up for a higher quality unit.
