The pan you want, as recommended in the Cooks Illustrated November 2007 issue, was the Lincoln Wearever HEAVY DUTY 13 Guage 1/2 sheet pan, model 5314. The pan sold on Amazon is the Standard Duty 18 guage, and is considerably lighter, and much more prone to warpage. Lincoln Foodservice was bought out by Vollrath, and is now the Vollrath Wearever Model 5314, .

I love love love these sheet pans; They bake and roast everything and anything beautifully and are easy to clean. Dark colored pans burn your foodand nonstick never browns anything. The weight and color of these are perfect. I have one for roasting vegetables (I usually put a piece of parchment to line the pan altho not necessary; but do toss the cut up veges with oil) at 500 degrees; the veges come out golden and done inside. I bake any cookie recipe on this (also on parchment-altho not necessary) and the cookies come out golden and perfect. I've roasted pieces of chicken; I've made chicken wings. Just incredible pans. does not warp and still using them August 2012. at 500 +degrees it might give a bit but goes right back to original form. and I know these are not the ones recommended in Cooks. I have those also. these work just as well.

I purchased these pans last fall because of a recomendation from Cooks Illustrated magazine. I was not dissapointed! These are a heavier weight and they do not warp. Wash by hand, as dishwasher detergent disscolors the pans. Order more than two, you can use them in so many ways! I could not find these in stores.

Count me as another person who bought this on the basis of a CI review. It's the best pan of its type I've ever owned. I regret buying only one. The CIA Masters 12x17 wire rack fits perfectly in it so that you can use it for roasting chicken pieces or chops with no trouble. (Make sure to use nonstick spray on the rack, and put some foil down on the sheet for easy clean-up).

It can be used as a cookie sheet, roasting pan, or jelly roll pan. Mine looks new and I've been using it for months. It's heavy and obviously excellent quality. You won't regret buying it.

Like so many purchasers of these pans, I too thought I was buying the pans recommended by Cook's Illustrated in their 2007 review of sheet/baking pans. BUT, that turned out to be just fine!

If and when the pans I purchased warp or fail and I deem them a threat to my culinary efforts, I'll try the heavier, Sheet Pan Half Size 12-7/8'' x 17-3/4'' Heavy Duty, 13 Gauge by Wear-ever (which are sold ON Amazon, but not BY Amazon-no Prime Shipping). Thank you so much "UpperDown" (the reviewer of the 13 gauge pans) for your excellent detective work and review of the other pans.

Back to this sheet pan. My husband and I spent the summer tomato harvest season whipping up garden fresh, home-made pizza topping. Recipe: Gently combine slices of heirloom tomatoes, basil chiffonade, sliced garlic, capers (and a bit of caper brine for salt), a little white balsamic vinegar and a little sugar. Spread to single slice thickness on foil covered baking sheets and bake at 475 degrees until tomatoes start to caramelize (see customer photos of tomatoes, before and after roasting). The resulting, intense and heavenly tasting tomatoes were beyond superb with a bit of fresh goat cheese on a home-made pizza crust (recipe from Healthy Bread in Five Minutes a Day: 100 New Recipes Featuring Whole Grains, Fruits, Vegetables, and Gluten-Free Ingredients) or tossed with freshly cooked pasta. We froze quite a few quarts of oven roasted tomatoes that the family is enjoying to the fullest during these cold winter months!

PROS: Despite the high temperatures, our pans did not warp. They clean up nicely and stack well. They've baked chicken, pork, cookies, tomatoes, oven roasted root vegetables, eggplants, peppers and more. The cooling racks, CIA Masters Collection Set of 2 12 x 17 Inch Cooling Racks fit perfectly in these baking sheets.

CONS: None

They have become such popular pans in the kitchen AND around the house that I may have to buy a couple more for my husband to use for seedling pots in the spring. The alternative is to find my sheet pans missing one day and finding them under the seedlings as in past years. Those "borrowed" sheet pans rusted and necessitated the purchase of these great baking sheets.

One more plus for these pans, they are clearly stamped "MADE IN USA"!
