I wanted a small omelette pan. I also wanted to try copper to see if it really does work as well as claimed. Well, this skillet works great. Before using it I seasoned with some coconut oil overnight. Then I cooked five or six 2 and 3 egg omelettes some with salsa in them, some with cheese. I had the heat up, used butter to oil up the pan and poured in the eggs. Cooked the eggs for about 20-30 seconds while swirling it around. Then I put the salsa or cheese in the middle and slid the cooked eggs out onto a plate, folding it into an omlette in one motion. It was perfect. A simple wipe with a paper towel and it was clean, ready for another omelette or to be put away. There was absolutely no sticking. The no-drip lip on this model works well. No oil ran down the outside. The copper outside turned a golden color from the heat but stayed clean and bright.I'd like to get a 12 inch version too. Hopefully the prices will go down after the holidays and the stock is replenished.
