I am a huge fan of silicone baking products and this one is tops.
I use them not only to roll out pastry dough and cookie dough but primarily for use when I am baking...You know how you typically have to add fat to your biscuits, cookies, rolls etc because you need to grease the baking sheets? You know how, after you cook some cookies, some stick and you have to re-grease the sheet but you get butter mixed with crumbs so more stick? You know how you lose some of your cookies because some break when they stick to the pan?
No more.
Simply lay the colorful sheet on to your baking sheet, place whatever it may be that you are cooking on top, and they remove flawlessly every time...pretty much without so much as a spatula So easy to lift you can remove the items by hand.
When I am done baking, I simply lay it on top of my dishes on the top rack of my dishwasher...and it's cleaned on it's own, although washing by hand is equally as easy.
Best yet, it's BPA free so it's healthy baking ware--and you save big on calories by not having to grease your baking sheets!

This silicone baking mat from SafeDine is of excellent quality: there are no imperfections and it is very flexible. The translucent blue color is beautiful, too—it reminds me of beach glass.To test it, I made a batch of whole wheat scones, which is a fairly sticky dough. I shaped the dough on the mat and then used a very blunt table knife to cut the wedges. There was no damage to the mat and no debris or sticking. The underneath has a grippy texture so the mat doesn't slide.
Then I applied a plain buttermilk wash to the wedges. I use a lot of buttermilk and coat not just the top but all the edges because it gives them a nice color and shine and a bit of a crust and also helps keep them fresh. I really slopped the buttermilk on and let it run all over the mat.
The stove in my kitchen is a small apartment-sized model and a half-size baking sheet doesn't leave much room around the edges for the heat to circulate. Even with a double-walled insulated baking sheet, the bottom surfaces of baked goods get too brown while the tops are still not quite done. This silicone baking sheet must provide just a bit more insulation because the scones came out more evenly browned than ever before.
Afterwards, the scones literally just fell of the baking mat when I lifted it from the pan. Usually, some of them stick to even a buttered sheet and I have broken more than a few trying to remove them.
The glopped-on buttermilk was burnt to a crispy dark brown to black residue and some of it wouldn't wipe off with a sponge. I folded up the baking mat and submersed it in sudsy water in the mixing bowl for an hour. All of that buttermilk washed right off with a sponge.
The mat also has measurements in inches and centimeters for measuring dough. It covers almost all of my baking sheet with just an inch or so left on each side.
I have only used silicone in candy molds and a stovetop moka maker gasket before and I like them but now I wish I had tried a silicone baking mat sooner. The benefits it provides are quite impressive: avoiding messy buttering or spraying, improved quality of browning, no-effort removal from the sheet, plus easy clean-up.

Got this mat a few weeks ago, and it's been a perfect addition to my kitchen. All my baking sheets have gotten pretty grimy over the years, so I've taken to lining them with aluminum foil whenever I bake with them. The SafeDine baking mat is perfect for lining my baking sheets without wasting all the foil!Most recently I used my SafeDine for baking chocolate chip cookies. Contrary to the label, the baking time didn't change (probably because cookies are so small), but they still browned nicely on the bottoms the way they do without the baking mat. I would definitely still check five minutes earlier than usual just to be sure.
I also love that this comes with a ruler on the side. It's handy for spacing cookies on the cookie sheet. I also couldn't find a tape measure in the house and ended up holding up the baking mat to use as a ruler.

I've tried a couple of silicone candy molds, but never entertained the thought of using a baking mat. Naturally, unless you want to get burned, you'll want to put a solid baking sheet beneath the mat. Silicone does have a slight odor, but the SafeDine didn't have an overwhelming one to turn me off. I washed it in "warm, soapy water" as directed. I didn't make cookies, but rather made some cinnamon buns. Very often they end up much darker than I'd like when I bake them on a cookie sheet. Not this time. They turned out a nice light, golden brown and ever so slightly crispy on the bottom.PROS:

There are several things about this mat that I like, including the fact that there are measuring guidelines along the edges. Mind you, this is not a pastry mat so you cannot roll your crust to the exact measurements, but if you're an experienced baker you can eye it. This mat would be ideal for rolling or kneading any kind of dough as it in nonstick and nonskid. When I baked the cinnamon buns I noticed that the heat transfer was excellent and done evenly. For example, the bottom of the buns were evenly browned, not dark on one side and light on the other. If you haven't tried one of these mats, you should. It makes baking and cleanup very, very easy.
