It is solid and has the 3 sides. As far as turning gray? I personally hand wash all of my cutlery and kitchen utensils. I assume dish-washers were the reason for losing the finish. I cannot see how using to pound meat and wiping clean can hurt it. Well built, nice weight. Has a flat side good for pounding chicken. Contempory calphalon style matches other calphalon products.
