I have been a very devoted fan of viking stainless steel pans for the last 7 years. They distribute heat evenly, clean up beautifully, go from stove to oven without a hitch and can go in the dishwasher in a pinch (though I usually wash by hand). I think that a big difference between viking and all-clad pans is the comfort of handles. The rounded edges of the Viking are incredibly comfortable and resist heat well. The all-clad very much hurt my hands given the weight of the pot and the folding of the handle to the lower aspect of the handle.

They hold heat so well, cook with less water, less time and clean so easily. Even if you mess up and burn them, everything comes right out. I love all my Viking pots + pans. Every single one of them.

These Viking stainless pans are wonderful in some ways. They have flat bottoms which are essential on a flat ceramic cook top. You really do cook in less time, using less water and heat. However, they are very hard to season and I had to try two different methods. Adding more oil than normal at the beginning of cooking, heating that and then adding the food works very well.

I have not tried the really expensive "waterless" 5 or 7 layer stainless pans, but for the price I think these Viking pans are excellent if you are willing to take the extra time to initially season them, plus the extra time it takes each time you wash and dry them to keep them looking nice and shiny.

If you have been using non stick cookware for several years as I did be prepared to learn how to cook all over again. Once you do, you will be very pleased with the pans and know that you are no longer eating chemical coating with your food.

This pan completes our set of Viking pans. They are great quality if you like scrubbing. But, that is what you expect for the look and feel of steel, no memory loss from aluminum and no non-stick stuff getting in the food.
