Customer review from the Amazon Vine Program This pan is much more than just a braiser for me. I don't eat much meat, but I do make a lot of bean and vegetable dishes. This pan is perfect for my "in-between" size recipes. If my large soup pot is too big, and my big saute pan is too small, this 4.5-quart braiser pan is usually just right.I love the way the pan distributes heat evenly when I'm cooking on the stove top. I have a vegetable korma recipe that uses a lot of thickly cut vegetables. It can be hard to cut them all the right size so they'll be tender at the same time. When I made the recipe in this pan, the even cooking worked like a dream. All of the vegetables were tender but not mushy, and full of flavor.
I have a Greek chicken stew that goes in the oven. I've made it in a cast-iron Dutch oven before, but I like it better in this braiser pan. The pan is wider, and I can spread all the chicken and potato pieces out so they cook faster and more evenly. The cast aluminum is also a much lighter weight, so it's easier to lift out of the oven.
Speaking of pan width, the space where you put the food in this pan is almost 12 inches across, but the handles make the total width about 15 1/2 inches. It can be hard to find a place to store it in a small kitchen, so measure before you buy. If you want to store it with the lid on top, allow for about 5 inches in height.
This pan is fairly shallow, so if you cook a lot of big cuts of meat, you'll want to check out some of Nordic Ware's taller cast-aluminum pots.
One thing I'm still adjusting to is that the handles get very hot. They are metal, just like the rest of the pan. If you're accustomed to cookware with heat-resistant plastic handles, it can take a while to get in the habit of grabbing hot pads when you want to move this braiser around on the stove top.
My only concern so far is that after two uses, there was a white residue on the non-stick coating all over the center of the pan. I can't get rid of it, no matter how much I soak and gently wash the pan. I can't scrub it without ruining the non-stick finish. I've had my non-stick Silverstone saute pan for over ten years now and it has never developed a residue, so I have to question how well the coating on this braiser will hold up over time. I still recommend the pan, though. It's nice to have something made in the U.S., and Nordic Ware gives you a limited lifetime warranty on its products.

Customer review from the Amazon Vine Program Don't let the term cast aluminum give you the impression that this pan is any less quality than cast iron. The cast aluminum is just as solid and cooks just as well, with the biggest difference being that it's lighter in weight. However even being lighter to work with, its still got some weight to it. It still feels like a big hefty pan, but it's lighter than the almost impossible to lift cast iron version.I love this pan for sauteing in. It caramelizes onions, peppers and garlic beautifully. French toast comes out fantastic using it, and it's also perfect when I want to make a large batch of cornbread to go with a pot of chili. It turns out just like it use to, when cooking from cast iron pans. It also browns meats on the stove-top and then allows you to finish cooking them in the oven with the large lid, made of the same cast aluminum, designed to keep meats moist and basted while they are cooking.
The handles are a good size and I am able to get my hands into them easily. They are large enough that I can use oven mitts or pot holders on my hands to carry the pan from the the oven by the handles. Which is a good thing, since the handles are made of the same aluminum as the pan and they get just as hot as the rest of it when it's in the oven.
I've found this quite easy to clean, especially if I deglaze it first with a little water after cooking. The non-stick surface works great and you take care of it the same way you would most other non-stick cookware. Because it's aluminum, it doesn't rust over time in any scratches, like cast iron can. It's a beautiful pan that I keep finding more uses for each day, and would recommend this to anyone looking for the quality of a cast iron pan, but more far easier to use because of its lighter weight.
